Simple Lunch Of Stir-fried Terasi Jengkol and Anchovies

Enjoying a simple yet flavorful lunch made me very excited today. After doing my never-ending homework, I went straight to the kitchen when the lunch hour would start in the next hour. Today I made a simple but trust me this can replace the position of meat for me. That is jengkol and anchovies, jengkol is a type of vegetable that is quite popular. It has a good taste, but a bit of a pungent odor in the mouth if you are not good at processing it. I have previously made a vegan dish from this fruit, namely jengkol rendang. Now this time I will prepare jengkol in a different way, namely jengkol anchovies stir-fried shrimp paste.

In this dish, I prepared jengkol with a combination of anchovies and seasoned with shrimp paste. Simple and simple but this is quite spicy with a blend of chili peppers. Now for you lovers of spicy and simple food, let's take a look at this recipe!..




Ingredients Used

400 grams of jengkol
50 grams anchovies
1 tomato
2 cloves of shallots
1 clove of garlic
1 spring onion
To taste shrimp paste
5 jumbo chili peppers
6 green chili peppers




Cooking Procedure


Step 1


Peel the skin of the jengkol, leaving all of it thoroughly peeled.

Step 2


Then fry the jengkol until brownish yellow, or until the epidermis peels off.

Step 3


Cut the jengkol according to taste, here I cut it into four parts.

Clean the head then the cuck and soak with a little water, and then fry anchovies with a little oil, fry until brownish yellow or until crispy.

Chop the spring onion then chop the chili.

Then coarsely chop the tomatoes, dissolve the shrimp paste in a little water, stir until it dissolves in water.

After all the ingredients are ready to be cut, saute shallots and garlic with a little cooking oil.

Add shrimp paste that has been diluted with water then add tomatoes, cook for a while until wilted.

Add the jengkol that has been split earlier, stir and give a little water.

Add chili and spring onion and cook until everything is cooked.

If everything is soft, finally add the anchovies and stir until cooked. Don't forget to correct the taste if it's right, you can add a little salt.

Jengkol anchovies sauteed with shrimp paste is ready to serve, serve while still warm in a serving dish. I highly recommend you to enjoy this dish with warm white rice. Stirring the rice and stir-fried jengkol and then you enjoy it very deliciously. Ahh this dish is indeed my favorite, although enjoying this can make the aroma of the mouth different but beat the deliciousness of this dish.

Well, for those of you who are trying jengkol fruit for the first time will definitely feel strange, but believe me at first I also felt it and now this one fruit is a must-have vegetable when the season arrives in my area. Any kind of processing is very good, even fried just dipped with chili paste is also delicious and makes me forget about meat at that time.
