Cooking Cassava Leaf Curry with Salted Anchovies

Hello, today I made cassava leaf vegetable curry with an anchovy mixture. This anchovy is made from small sea fish that are dried in the sun, usually some are very salty and some have no taste or are bland. Usually we use this salted fish as a mixture in cooking vegetables or stir-fry. Apart from anchovies, we also cook cassava leaves because these leaves are very delicious when we cook them. I don't know if where our friends live there, you consume cassava leaves or sweet potato leaves. In Indonesia, cassava leaves and sweet potato leaves are used as food, usually cooked with coconut milk or vegetables. Goulash or to eat with chili sauce is also very delicious.

Some ingredients we need to cook cassava leaf curry:
♡ 6 red onions
♡ 4 cloves of garlic
♡ 7 red chilies
♡ 5 spicy cayenne pepper
♡ 5 cm turmeric
♡ 2 candlenuts
♡ 1 Tbsp coriander
♡ 1 tsp salt
♡ ½ tsp flavoring
♡ ½ tsp mushroom stock powder
♡ 1 tsp brown sugar
♡ ½ tsp ground pepper
♡ 1 stalk crushed lemongrass
♡ 1 thumb galangal
♡ 4 pieces of lime leaves
♡ 2 bay leaves
♡ 65 ml instant coconut milk
♡ 200 grams of boiled cassava leaves
♡ 100 grams of salted anchovies


How ​​to make :


  • prepare the ground spices then blend the shallots, garlic, red chilies, turmeric, candlenuts, coriander. Then set aside (for spicy cayenne pepper, don't grind it finely, just add it directly to the vegetables)

  • Cut the cassava leaves into smaller pieces to make it easier to eat

  • fry the anchovies that have been washed thoroughly until dry

  • Use oil used for frying fish to sauté ground spices and lemongrass, bay leaves, lime leaves, galangal until fragrant and oil comes out.

  • add water little by little then cook again until boiling. Don't forget to add salt, sugar, seasoning and mushroom stock, ground pepper according to taste.

  • Add the spicy cayenne pepper and cassava leaves that have been boiled previously and cook again until boiling

  • Add coconut milk and fried anchovies and cook until perfectly cooked.

  • Cassava leaf vegetable curry is ready to be served.
