A combination of spicy, sour and sweet flavors from "Asinan Buah".
Hello everyone... meet with me again... a few days ago I made "Asinan Buah" or pickled fruit. I don't know if you have food like this at your place. In Indonesia, this is one of the most popular foods. Asinan itself consists of several types, some made from vegetables and from fruit. On this occasion I made pickled fruit. The fruit I use is jicama, pineapple, cucumber and also young mango. But if you want to replace the fruit with another fruit, you can.
In Indonesia, Asinan is known in the Bogor area, West Java. And there is also typical Betawi Asinan, Jakarta. Each has different characteristics, friends.
This time what I made was typical Bogor pickles which actually included the addition of fried peanuts. But because I ran out of stock of peanuts, it's a shame I didn't use them this time. Even so, the taste is still delicious and the same as the typical taste of Asinan in its region of origin.
I want to give an idea of the taste created from this Asinan. Even though the word "Asinan" (asin means = satly) it doesn't taste salty like too much salt, friends. The taste of this pickle tends to be sweet, spicy and sour. The taste must be sour.
The way to enjoy it must be left at least overnight to get a delicious and fresh taste. This is like a pickling process but a little different because the pickles are served with a sauce like a fresh cold soup.
Materials used:
3 honey pineapples
3 jicama fruit
4 cucumbers
3 young mangoes
Ground spices
30 grams shrimp paste
30 pcs curly chilies
17 pcs cayenne
1 tbsp tamarind
Just take the juice from 1 lime
3-5 tablespoons vinegar (depending on brand)
2 tbsp salt
120 grams of brown sugar
150 gr granulated sugar
How to make
• Cut all the fruit then leave it in the refrigerator. For pineapple, don't forget to soak it in salt water first to relieve itching.
• After soaking for 10 minutes, wash and drain the pineapple.
• To make the sauce, we first boil the chilies in a pan filled with water until the chilies wilt, then drain. And blend until smooth.
• Add brown sugar, granulated sugar, salt, shrimp paste, tamarind and cook until the sugar dissolves
• add vinegar little by little (be careful when using vinegar because each brand has a different acidity level) and also add lime juice.
• Finally add the ground chilies and cook until cooked and boiling.
• Pour the pickled sauce into the previously prepared fruit. Don't forget to strain the sauce first. Store in the refrigerator for at least 4 hours to get a better taste.
• Asinan Buah are ready to be served.

Oh, in fact I really miss this "Asinan" from Jakarta. I dunno why in my area (Sumatera) the taste is not same.
Really? Maybe it's because this "asinan" is synonymous with Bogor and Jakarta, so in other areas it doesn't taste the same...try making it yourself at home, maybe the taste will be much better😊
