Word of advice from a seasoned punster....never use your punchline in the setup, it takes away from the comedic effect.

In this instance, I would say:

"Why did the lamb run away from the date?"

Then your joke hits harder!

Why did the sheepish sheep run away from his date? Because he was feeling sheep. I mean sheepish. I mean, he really is a sheep, so he can't be sheep-ish. Like, if I'm 7 feet tall, I'm not tall-ish, I'm just tall. To be clear, I'm not that tall. I'd say in some circumstances folks might call me tall-ish, though. I'm about average height, but if you're trying to reach a shelf but can't because you're shorter than me, then you might ask me because I'm tallish. In conclusion, the sheep was feeling shy. And another word for that is sheepish because sheep kind of come off as shy because they're wary of predators, and people are, frankly, predators.
