Delicious Vegan Nuggets. Recipe..

Greetings my dear community, I hope you are feeling very well, I really want to eat something delicious and healthy, today I want to share with you a dish that I love, Vegetable Nuggets, these nuggets have nothing to envy of the traditional ones, they are also full of flavor, color and most importantly they are nutritious, and have many vitamins, my little Mica loves broccoli, so I take the opportunity to make these nuggets for her, with broccoli and other vegetables, and thank God she loves them, they can be made in a very short time, with the vegetables we have at home, and I assure you that they are wonderful, I will share the step by step.

Delicious Vegetable Nuggets.

Ingredients:

  • Half Broccoli.

  • Half Cauliflower.

  • Half an onion.

  • 1/2 cup of cooked lentils, you can also use peas.

  • Half a red pepper

  • Half a carrot.

  • 1 clove garlic.

  • Salt to taste.

  • 1/2 cup of breadcrumbs.

  • Olive oil, sunflower, or whatever you have at home.


Preparation:

1- We separate the cauliflower wedges and the broccoli, and cook them in a pot with water, and a little salt, over medium heat, until they are a little soft.


2- When the cauliflower and broccoli are cooked, we remove them from the heat, drain and add to a bowl, with the help of a fork, or food processor, we make a puree, it is advisable to do it with the vegetables still hot, to make it easier to crush them. We reserve.


3- Chop the onion, paprika, and chili into small cubes, crush the garlic, and grate the carrot, sauté everything for a few minutes over medium heat, then remove from the heat and add the cooked lentils.


4- Add the vegetables with the lentils to the cauliflower and broccoli puree, add salt to taste, if you wish you can add any spices, with the help of a spatula, mix all the vegetables until a dough is formed.

5- To form our nuggets, we grease our hands with a little oil, form some balls, and flatten them to shape them into nuggets, then pass them through the breadcrumbs.


6- In a preheated frying pan with oil, add the nuggets until they turn golden brown on both sides. When they are ready, remove from the heat. We can also bake them, and they will be just as delicious.

7- We served the nuggets, with some companion, I accompanied them with an eggplant cream that I had ready in the refrigerator, and enjoy this bomb of flavors, these vegan nuggets are truly delicious.

Saludos mi querida comunidad, espero que se encuentren muy bien, con muchas ganas de comer algo delicioso y saludable, hoy les quiero compartir un plato que me encanta, Nuggets de vegetales, estos nuggets no tienen nada que envidiarle a los tradicionales, además están llenos de sabor, color y lo más importante son nutritivos, y tienen muchas vitaminas, a mi pequeña Mica, le encanta el brócoli, así que aprovecho de hacerle estos nuggets, con brócoli y otros vegetales, y gracias a Dios le encanta, se pueden hacer en muy poco tiempo, con los vegetales que tengamos en casa, y les aseguro que son una maravilla, les comparto el paso a paso.

Deliciosos Nuggets de vegetales.

Ingredientes:

  • Medio Brócoli.

  • Medio Coliflor.

  • Media cebolla.

  • 1/2 taza de lentejas cocidas, también pueden usar guisantes.

  • Medio pimentón rojo

  • Media zanahoria.

  • 1 Diente de ajo.

  • Sal al gusto.

  • 1/2 taza de pan rallado.

  • Aceite de oliva, girasol, o el que tengan en casa.


Preparación:

1- Separamos los gajos de coliflor, y el brócoli, y los llevamos a cocinar en una olla con agua, y un poco de sal, a fuego medio, hasta que estén un poco blandos.


2- Cuando estén cocidos, el coliflor y el brócoli, los retiramos del fuego, escurrimos y agregamos a un bol, con la ayuda de un tenedor, o procesador de alimentos, hacemos un puré, es recomendable hacerlo con las verduras aún calientes, para que sea más fácil triturarlas. Reservamos.


3- Picamos en cuadritos pequeños, la cebolla, el pimenton, el aji, trituramos el ajo, y rallamos la zanahoria, lo llevamos todo a sofreír por unos minutos a fuego medio, luego retiramos del fuego y le añadimos las lentejas cocidas.


4- Agregamos los vegetales con las lentejas al puré de coliflor y brócoli, añadimos sal al gusto, si desean pueden agregar alguna especia, con ayuda de una espátula, mezclamos todos los vegetales, hasta formar una masa.

5- Para formar nuestros nuggets, nos engrasamos las manos con un poco de aceite, formamos unas bolitas, y las aplastamos para darle forma de nuggets, luego los pasamos por el pan rallado.


6- En un sartén con aceite, precalentado, agregamos los nuggets hasta que se doren por ambos lados, cuando estén listos retiramos del fuego, también podemos hacerlos horneados, y quedarán igual de deliciosos.

7- Servimos los nuggets, con algún acompañante, yo los acompañé con una crema de berenjena que tenía lista en la nevera,y a disfrutar de esta bomba de sabores, de verdad una delicia estos nuggets veganos.

Hola, que delicia de Nuggets y de verdad que no tienen nada que envidiarle a los tradicionales, además esa combinación es una delicia, los he preparado pero sin las lentejas y la zanahoria, coliflor y brócoli nada más con las especies.
