Pumpkin leaves vegetable sauce with rice

Well this has to be my favorite way of eating white rice, I love vegetable sauce on my rice, and...today im going to share how I prepared this delicious one

Ok, you already know the main ingredients, or don't you? Well, yes we call it here pumpkin leaves. I don't want to let you guess the rest of the ingredients so I'm giving you a list of it below:

Ingredients used

  • 2 bunch of pumpkin leaves
  • 3 medium sized onions
  • 1 cooking spoon vegetable oil
  • Fresh pepper to taste
  • Salt to taste
  • 1 cooking spoon tomato paste

Procedure

One thing about this vegetable is that it's a bit harder to slice it than the rest of it, but a sharper knife make it easier, sadly ours needed more sharpening so the vegetables was a bit hard to slice. But glad I did finally. I also cut the onions and got it ready. I was also able to grind the pepper with the help of a mortar

Ok after getting the stuffs ready, I put a pot to heat and added the onions to it. Oh I love sauteed onions, and that's how I made it

Next I added the tomatoes paste to it and stir till tender

Then the I also put the mortar grinded pepper to the taste and was stirring it too, then the salt was also added.

After that, it was time to add the sliced vegetables to it, I added it to the mixture and added sliced onions inside it

After adding the vegetables I covered the pot for about 10 seconds to let the vegetables cook down a bit. Then I stirred it well and it was ready!

After boiling rice, everything was ready, food was served and as you see from the first images of this post, J arranged them differently for the sake of a good post lol and to see how differently this mela can be served. So here below is the selfie of my favorite serving:

I like the presentations in photos 'A' and 'C' the best! I've never eaten pumpkin leaves, only the pumpkin meat, but would like to try this! 😋
