Happy Three kings Day, dear coffee lovers
In my house it is customary to roast the coffee that is consumed, my mom does not like to buy the roasted coffee that they sell on the street, because lately they tend to mix it with other beans so that it "yields more”
A few days ago when a salesman came by the house offering coffee beans my mom bought him.
We were drying it for 3 days, it needed some sun.
On the third day we started to remove the peels because he had so many. My grandmother decided to take over the task while I was helping her to give her the last look.
After a few minutes we had the grains separated from the shells.
Usually coffee is roasted in a spacious place, where the air flows well since they say that the person who roasts tends to have very exposed lungs. We are heading towards the courtyard. In the countryside, wood-burning stoves are used, the one in my house was too high for my grandmother, so we quickly improvised one.
Empty the coffee for the carderito that we use in these stoves and create the rest of the conditions, you would also need half a lata of sugar (this measure is depending on the amount of beans, we had 2 latas)
Every so often it had to be stirred so that the grains reached the desired doneness. My grandmother said from the first moment that she didn't want them too toasted or red, she wanted a middle ground.
When the smoke started to show I added the sugar, because this is the signal that coffee emits when it needs it.
Soon the syrup was created and when mixed with the grains it formed a kind of marshmallow. We took the little card from the stove down so that it would finish with the same heat it had left, well, it was ready.
We let it cool down, the next step was to grind to obtain the powder that we supply to our coffee makers.
The powder is ready, the approval would be given by my mom when I strain and the rating was 10/10. That aroma permeated the whole house, it was exquisite.
The score was 20/10, it had been great. I quickly prepared my little bit with cream which is the only way I like it (or with milk).

For the next one I will stop being a helper and I will roast the coffee myself, this time I copied all the steps well. I will tell you later in another experience. See you soon!
