COFFEE CHEESECAKE
Coffee always gives me excellent ideas to be present in my daily life; whether it is when I say good morning, when it is part of my snacks, when it accompanies me to read a good book, or like today, it becomes a dessert for my enterprise.
For some days now I have had the idea of making desserts based on coffee, and I came up with two that I had already seen on the web; quesillo and coffee marquise. To make one, I am obliged to make the other, why? Because the marquesa has quesillo among its ingredients. So early in the morning I proceeded to make my delicious Coffee Cheesecake, the first time I prepare it, and wow, honestly, it turned out wonderful.
Today I am going to share with you the recipe for the coffee cheesecake, in simple steps, and in another post, I will share with you the steps to elaborate the coffee marquesa.
For the coffee cheesecake the ingredients are:
3 eggs
3 cups of powdered milk
1 cup of coffee (liquid)
2 cups of water
2 tablespoons vanilla
2 tablespoons rum
1 cup of refined sugar
For the caramel:
1 cup water
A stick of cinnamon
1 cup of sugar
The steps are quite simple:
First I placed in the aluminum mold the cup of water with the cinnamon stick to give it a special flavor to my caramel, then I added the sugar. When it started to boil, I removed the cinnamon and let the caramel come to a boil. I removed it from the fire and let it rest.
I prepared a strong coffee and reserved a cup.
In a blender mix all the ingredients; the eggs, the powdered milk, the sugar, the cup of coffee and one cup of water. The remaining cup of water I combined with the vanilla and rum to complete its level, and added it to the blender mixture.
I placed the contents in the mold with the caramel and put it on the stove in a double boiler for an hour. To be sure it was ready, I inserted a knife in the center and it came out clean. I let it rest for a few hours, and took it to the refrigerator inside the mold, that way I was sure to unmold it and that it would come out complete.
Tip: The cheesecake should not be unmolded while hot because they can break, they should be cold when they are cold.
This coffee dessert can be enjoyed at any time, it can be eaten very cold, and my recommendation is after lunch or in the afternoon snack. I hope you liked it. Happy beginning of the week.
