Delicious Creamy Stir-fry of Dried Anchovies Combined with Cempokak

The touch of abundant seasoning with a creamy texture creates a wonderful flavor. It's so nice to be able to enjoy dried anchovies that are processed with delicious spices.

Hi foodies, today I'm home alone, and as usual I have to cook a simple dish with a small portion. I plan to process dried anchovies, dried anchovies are often at home as a stock of food that is easy to prepare. Well, this preparation is indeed made from dried anchovies, and for wet anchovies, the taste will be different.




Stir-fried Creamy Anchovy Cempokak

Tumis teri cempokak is a combination of anchovies with a combination of cempokak which is given a strong seasoning added with coconut milk so that it produces a creamy texture and has an authentic taste. This gravy combination is indeed very delicious and very popular in our area. And this dish is usually served at our house to be enjoyed as a side dish for family lunch.

I'll show you how to prepare the ingredients as well as the step-by-step preparation procedure!.




Ingredients

Main Ingredients


100 grams dried anchovies
100 gram cempokak
150 ml thick coconut milk
2 bay leaves
2 orange leaves
1 curry leaf

Ground Spices


6 dried red chilies
3 cloves shallots
1 hazelnut
1 clove garlic
1 teaspoon coriander powder
1 teaspoon turmeric powder




Cooking Procedure


Step 1


Prepare fine spices cut into small sizes, well for dried red chilies soak briefly with boiling water. And also don't forget to soak the dried anchovies briefly in boiling water.

Step 2


Then blend until smooth the ingredients that have been prepared, including the dried chilies earlier as well as turmeric powder and also pepper powder blended with enough water.

Step 3


Prepare the cempokak, mash the cempokak in plastic then wash the cempokak thoroughly to remove the seeds inside.

Step 4


Saute a clove of shallots and bay leaves as well as curry leaves and lime leaves. Then add the ground spices and cook for a while.

Step 5


After the seasoning starts to cook, it doesn't smell too spicy anymore, add the soaked anchovies, stir, then add a little water.

Step 6


Once the soup water starts to boil, add the coarsely ground cempokak.

Step 7


Then add thick coconut milk, and cook until the sauce starts to shrink and thicken. Now here I immediately start seasoning with salt and also add whole cayenne pepper. Furthermore, if everything has shrunk, it means that this stir-fry spice creamy dish is ready to be served.

Serve dried anchovies with cempokak in a serving plate, enjoy with warm rice is the main thing I do. The deliciousness of the combination of all ingredients cannot lie without additional broth alone this is very good.

I highly recommend this dish for those of you who love the creaminess of the dish and of course if you have anchovies make this dish guaranteed you will love it. The taste is indeed very savory especially there is coconut milk that makes the texture more solid. Now this dish itself can be enjoyed by 2 to 3 people, I myself can enjoy 2 meals, at noon and night of course by combining with warm white rice.
