Duck, it's a wee Burns house

I have had a day that nearly resulted in my not posting. I wasn't going to and then I remembered my friend, Ed (@tengologodo), and how he'd been on my mind as I cooked supper last night. Not only did I poach one of his favourites - duck eggs - but when I drained them, I realised it was on my Mum and Dad's old Burns tea towel. When they got it, I don't know, but it's been lurking in my kitchen drawer for at least the last 22 years. The picture at the head of this post was the deal breaker maker because Burns' house peaks out between the eggs.

At the risk of repeating myself, I'm so enjoying popping into the garden - while it's relatively warm and still light - and so I did. Parsley and perennial basil.

The basil with two cloves of garlic went into a pot of homemade cottage cheese which, I figured might be nice with the beetroot and a great substitute change from butter.

Because I'm so in love with Trish's dishes, and as I keep on saying, I hate how beetroot "leaks" all over everything, I laid out a bit of deconstructed salad on a bed of green and with parsley waiting for the eggs.

And there you have it: after an almost summer day, a salad supper with poached eggs (hen and duck) on fresh parsley, with homemade cottage cheese creamed with basil and garlic. With, of course, potatoes for him.

Looks great it's hard for me to get a duck egg or meat in my area so we make do with chicken

My friend has ducks. When they lay, she lets me know. She doesn't slaughter them, so for us, duck meat is also rare.
