Pork Roast with Sweet Potato Mash!
Good evening everyone!
Its not normal for me to post two cooking posts so near one another... but it is the only worthwhile content that I have at the moment to post about that is ready to go out!
I am busy collecting funds for the Fund Raiser and thus I have to keep busy!
And I enjoy blogging about stuff I am actually doing and not just do stuff to make a post.
You might notice that I made sweet potato fries yesterday Friday night food! Chicken, sausage and Sweet Potato fries! That's because I got a whole lot of Sweet Potatoes for cheap!
So I had to try this out!
I used the sauce I made yeasterday and modified it. I then defrosted this roast and I have been grilling it on and off in the over for a while now. It should be nice and juicy by the time it comes out. I am writing this on my PC while I wait for it to cook. But I will wait till its all done before I take some photos and make this post.
The Sweet Potato mash was simple. Peel the potatoes, add salt, herbs, margarine and milk and mash till smooth. Looks great!
I can't wait to eat it! I am really hungry!

(no space) to get help on Hive. InfoOmg this was SO yummy. That particular cut if pork is always tricky to roast, because thy the fat is on the sides rather than covering the meat on its widest surface. This can lead to dry sad food. Whatever you did was utter magic and the meat was soft and tender with the fatty bits doing a bit of a crunchy thing without drying out or toughening the meat at all! YUMYUMYUM.
