Porridge beans with dry cassava flakes garnished with scent leaf
"Hey, Glory welcome back"
That was a greeting from my neighbor.
"Thank you" i responded.
"How was school today , come and eat with me".
My neighbor requested.
Normally, i would have declined her offer but when i looked closely and saw what was on her plate, i was like
"wow! What a wonderful combination, never seen it before ".
I moved to where she was sitting, not minding the environment, picked up a spoon and had a taste.
Wait! Please, don't call me a gluten, i was just curious ,
Curious of how the food was going to taste because it was my first time of seeing such combination.
It was my first time of seeing someone combine Porridge beans with dry cassava flakes,
To me, that was creatively awesome.
I had bought some dry cassava flakes from the market and decided to prepare that same delicacy for myself and family .
Below are the ingredients and procedures for making it...
- 1 cup of beans
- 2 and half cup of dry cassava flakes
- 1/2 cup of red oil
- 1 meduim sized onions
- 8 or 9 pieces of fresh red pepper
- salt to taste
- 1 meduim sized ginger
- 1 tablespoon of natural blended spices
- scent leaves for garnishing and taste
- enough water for cooking
I started by separating the beans from the chaff, then i washed and parboiled the beans,
I washed it again before cooking it till tender.
I washed my beans two times to avoid stomach ache as some people purge while eating unwashed beans.
While the beans was still on fire, i proceeded to slicing my onions, pounding my pepper and ginger .
Then i set them aside, i checked the beans from time to time to know if its soft.
I soaked my dry cassava flakes with cold water, this method won't allow it to take soft easily (hot water will soften it easily)
When the beans became soft, i removed it from heat and drained out the excess water.
I placed a clean pot on fire, poured the red oil, onions and ginger and red pepper,
I stirred it for some seconds.
After stirring, i added some amounts of water ,then poured my tender beans and allowed it to boil for sometime.
I also added my salt and natural blended spices and covered the pot, allowing my food to boil.
I drained out the cold water from my cassava flakes using a sieve.
Then poured it into my pot, stirred it and covered my pot.
I washed, cut and add my scent leaf to the pot , covereit for few minutes and my exquisite pot of porridge is ready.
While preparing my dish, a family came visiting and i had to serve them the dish,
Below is there review.
At first , when the saw the combination , they were like "wow! It looks nice but we haven't combined is two before ".
My husband assured them that it was sweet and they can try it ,so they did,
"If we hadn't come visiting, we wouldn't have learnt about this recipe, it's indeed great ",
They said.
Am really glad that the loved the recipe and would be making it at home soon.

I am pretty sure I would love this meal, I really like beans although I have never eaten oat beans, but I love oatmeal, so they must be very tasty, also cassava but I have never seen dried cassava flakes (this was a first for me) and all the other spices you used I love, so nothing could go wrong with this combination.
The story you tell reminds me of a saying in my country (Venezuela): "It is better to be on time than to be invited".
