Good evening my beloved vegan friends, today's weather is very hot, I feel very tired of doing activities in the middle of very hot weather, but as a housewife the work is also endless, when this afternoon I took the initiative to make rice vermicelli kolak with a mixture of jackfruit and sweet potatoes to enjoy in the afternoon.



Yesterday when I visited my sister's house, she made a rice vermicelli and jackfruit kolak dish, this was the first time I enjoyed this dish, usually I make fried rice vermicelli, but it turns out that rice vermicelli can also be made into kolak with a taste as delicious as this, then today I immediately tried to make it myself at home, the difference is I added sweet potatoes to the ingredients, let's see my recipe.



Ingredients:

🔹 500 grams of sweet potatoes.
🔹 4 rice vermicelli.
🔹 400 grams of granulated sugar
🔹 300 grams of jackfruit.
🔹 1 teaspoon of salt.
🔹 1 coconut.
🔹 4 pandan leaves.



How to make:

🔸Take the jackfruit filling.

🔸Peel the sweet potato skin until clean.

🔸Cut according to taste.

🔸Break the rice noodles into small pieces, add lots of water, let stand until the rice noodles bloom and cook in the water.

🔸Prepare a frying pan, add the sweet potato.

🔸Add salt.

🔸Add coconut milk, stir well, cook until boiling.

🔸Add pandan leaves.

🔸Add the rice noodles when the sweet potato is slightly cooked.

🔸Add jackfruit, stir well.

🔸Lastly add sugar, adjust the sweetness yourself.

🔸Turn off the stove, prepare and serve.



This kolak is also very delicious to enjoy at any time, because with its sweet and thick coconut milk sauce.
