For rice lovers, today I show you a different way to prepare it, it is a rice with zucchini, carrots, corn and mushrooms, ideal for a lunch that you can even eat it alone or accompany it with a few slices of fried plantain, I tell you that it is a nutritious dish, with an incredible flavor and easy to make, loaded with many vitamins, minerals and fiber in addition we take advantage of the nutritional values of these vegetables, since they are an excellent and best of all that the family enjoys it, I particularly love it and that is why I recommend it.
Para los amantes del arroz, hoy les enseño una forma diferente de prepararlo, se trata de un arroz con calabacín, zanahoria, maíz y champiñones, ideal para un almuerzo que incluso puedes comerlo solo o acompañarlo con unas rodajas de plátano frito, les cuento que es un plato nutritivo, con un sabor increíble y fácil de hacer, cargado de muchas vitaminas, minerales y fibra además aprovechamos los valores nutricionales de estas verduras y lo mejor de todo que la familia lo disfruta, a mi particularmente me encanta y por eso lo recomiendo.
02 cups of rice, 01 carrot, 01 zucchini, 01 cooked corn, 02 sprigs of chives, 01 red bell pepper, 02 cloves of garlic, 01 tomato, 1/2 cup of cooked mushrooms, 01 tablespoon of turmeric, 04 cups of water, salt and pepper to taste.
02 tazas de arroz, 01 zanahoria, 01 calabacín, 01 maíz cocido, 02 ramas de cebollín, 01 pimentón rojo, 02 dientes de ajo, 01 tomate, 1/2 taza de champiñones cocido, 01 cucharada de cúrcuma, 04 tazas de agua, sal y pimienta al gusto.
We start by washing all the vegetables, peel and grate the carrot, zucchini, scallion, red pepper, tomato and garlic, cut into squares and cut the corn into slices.
Empezamos lavando todas las verduras, pelamos y rallamos la zanahoria, el calabacín, el cebollín, el pimiento rojo, el tomate y el ajo, cortamos en cuadraditos y cortamos el maíz en rodajas.
In a pot put oil and when it is hot add the spring onion, garlic, red bell pepper and tomato, sauté for a few seconds, then add the zucchini, let it soften for a few seconds and then add the rice, mix and add the grated carrot, corn and water, cook over low heat.
En una olla ponemos aceite y cuando esté caliente añadimos la cebolleta, el ajo, el pimintón rojo y el tomate, rehogamos unos segundos, después añadimos el calabacín, dejamos que se ablande unos segundos y a continuación incorporamos el arroz, mezclamos y añadimos la zanahoria rallada, el maíz y el agua, cocemos a fuego bajo.
Now season with salt, pepper and turmeric, mix to integrate all the flavors and let it cook covered.
Ahora condimentamos con la sal, la pimienta y la cúrcuma, mezcla para integrar todos los sabores y dejamos cocinar tapado.
After a few minutes uncover and when the water is almost evaporated add the mushrooms, stir and cook for another few minutes until the water has evaporated completely.
Pasados unos minutos destapar y cuando el agua esté casi evaporada añadir los champiñones, remover y cocer unos minutos más hasta que el agua se haya evaporado por completo.
And ready to enjoy this delicious rice, full of nutrients. Serve hot.
