How are you, Good afternoon to all my loving friends. Rainy weather is prevailing these days. However, let's succeed in all the work that you and I have planned.Today I brought you a very delicious recipe. Recipe suitable for vegetarians.We call this the "Eggplant Pehiya". delicious So let's see how to make it.
Ingredients;
- 250g of eggplant
- Half a chopped onion
- Two chopped garlic
- Two chopped green chillies
- Curry leaves
- A tomato cut into squares
- Few pieces of cinnamon
- Half cup of condensed coconut milk
- Half cup of oil
- A teaspoon of sugar
- Two tablespoons of chilli powder
- A teaspoon of curry powder
- One and half teaspoons of salt
- Half teaspoon of turmeric powder
- Half teaspoon of fenugreek seeds
The method of making;
Wash and clean the eggplants and cut them into strips. Then add some garlic, chopped onion and curry leaves each.
Now fry them in deep oil until golden.
Now heat a pan and add half a cup of coconut milk to it.
Add chilli powder curry powder, turmeric powder, fenugreek seeds and salt and stir well.
Now add the cinnamon bark, the remain of b onion, garlic, and curry powder.
Now cook all this for about four to five minutes on medium flame.
When the milk mixture thickens, add the fried eggplant strips.
Add chopped green chillies and tomato pieces.
At the end, add a teaspoon of sugar and stir everything well again, keep it on the stove for about a minute and remove it from the stove.
Eggplant is the most delicious food. We can make this eggplant in many ways. Actually, this eggplant pehiya is one such very delicious curry. Even though it doesn't curry, you can taste this gravy.
