Delicious Soy Sauce, Carrots And Mint Leaves Soup Recipe π₯ππ²π
Greetings to you vegan lovers π±β€οΈ. And hope your day was loving and fulfilled.
Today I bring to share with you some super delicious easy to make recipe you will love to make to enjoy as lunch or dinner π₯. We can enjoy this recipe as an individual or as a family, increasing slightly the ingredients quantity.
Before I move on, I will tell you all how this recipe came about. Over this past weekend one of my sisters came around to enjoy dinner with us . So I planned to make fried rice π and some chicken π sauce as side meal π₯. So we ended up making the chicken sauce with carrots π₯, green peppers π«, soy sauce and some mint leaves π adding other spices to it to give it a spicy taste everyone loved. It was so delicious
So in my todays recipe of delicious soy sauce, carrots π₯ and mint leaveπ soup recipe, I prepared this sauce soup using soy sauce, carrots, mint leaves and some chopped potatoes as replacement for the chicken π for my vegan π± friends and lovers of vegan foodies, while also spicing it up. This recipe turned out so delicious and I know you guys will want to try it out. Its easy and straightforward.
Here I show you the ingredients and step by step for the preparation.
INGREDIENTS:
2 tablespoons of soy sauce
2 medium size tubers of potatoes
3 finger carrots
1 large bell pepper π«
Some mint leaves π
Some onions stem
1 teaspoon black pepper
1/2 teaspoon of curry
Oil to fry
1/2 teaspoon of thyme
1:2 teaspoon of sea salt π§
Blended cherry tomatoes paste
1 soy cube
STEPS FOR PREPARATION:
Step 1.
First thing to do is peel the potatoes, cut, chop them in squares and keep ready.
Step 2.
I will wash and prepare the vegetables one after another. First the mint leaves π and the onions stem was cleaned, washed and sliced
Then also washed and slice the carrots and the peppers.
Step 3.
Preparing all ingredients down makes our cooking easier and faster. Just like as I have everything ready here .
Step 4.
I went on to start frying the vegetables by placing the sauce pan on the burner adding some vegetable oil which I will allow to heat up before I added the green peppers and the carrots to fry for a while stirring them
Step 5.
In a while I will add the the onion stem and fry them on for about s minute to bring out every flavor and aroma.
Step 6.
After a minute, I will then add the tomatoes paste, the black peppers, curry, thyme, salt and the soy cube. I will stir them well to incorporate and allow to cook on.
Step 7.
Next I will add the mint leave πwhich I do not want to fry , so in some seconds, I added some water to the sauce to start boiling it.
Step 8.
And at this final stage, while the sauce now soup is boiling, I will add the soy sauce and the chopped potatoes, will stir and taste to make sure its well spiced. I then cover it to cook for another 5 minutes thickening up.
And once the soup π² thickens up a bit, I will bring it down and serve hot. This delicious soy sauce, carrots and mint leaves soup is a very healthy vegan meal. I recommend it to everyone to tty especially when we want something spicy πΆπ².
