Blueberry Muffins with Streusel Topping - by Sunscape
My husband's sweet tooth has kicked into overdrive. Apparently, there were no more muffins left in the freezer which he politely commented. :-)
I did have some frozen blueberries in the freezer that needed to be used. I looked for new recipes for "Blueberry Muffins" and found this one to try.
Blueberry Muffins
Recipe:
2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/2 cup melted butter
1/2 cup milk
1 teaspoon vanilla extract
2 cups (1 pint) blueberries
Streusel Topping:
1/4 cup all-purpose flour
2 tablespoons brown sugar
2 tablespoons sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
2 tablespoons cold butter
Preheat oven to 400 degrees. Prepare a muffin pan with cupcake liners. In a large bowl, sift together 2 cups flour, 1 cup sugar, baking powder, and ½ teaspoon salt. Set aside.
In a medium bowl, whisk eggs until smooth. Add the ½ cup melted butter, milk, and vanilla, and whisk until combined. Add egg mixture to flour mixture and stir until combined. (Dough will be lumpy.) Fold in blueberries.
Prepare the streusel topping, in a medium bowl combine ¼ cup flour, 2 tablespoons brown sugar, 2 tablespoons granulated sugar, cinnamon, and ⅛ teaspoon salt. Using a pastry cutter, cut in butter until the topping is crumbly and coarse.
Fill prepared muffin cups with batter. Top each muffin with streusel topping, about 1 tablespoon each. Bake until muffin centers bounce back when lightly pressed, about 18 to 22 minutes.
Let them rest for a few minutes and turn them onto a cooling rack.
I wasn't even done taking them out of the silicone liners before my husband had snuck one off the rack. He snickered and said, Honey, these are just unbearable, you really must try making another batch. :-)
I think this recipe is my favorite so far. Although, one must always try new ones, right?
I did double this recipe it made 24 muffins and a small loaf of bread. My 95-year-old neighbor was the recipient of the blueberry bread.
I quickly froze most of the muffins and left three for you know who to enjoy. Even if he joked about them being unbearable. :-)

Probably not long at all. I already saw that he took 3 more out, lol. He has a ferocious sweet tooth.
