Portioning and cooking

Hey, everyone! Today was Saturday, and I'm accustomed to going for my weekend grocery shopping and stocking my fridge with at least a week's worth of food. This time, I also purchased a vacuum sealer because I enjoy experimenting with my food, and a vacuum sealer can truly make a significant difference in preserving food. It can also help age my beef steaks without the need for a dry ager or paying double for dry-aged beef.

During my visit to the butcher's shop, I bought 1 kg of minced beef, 4 chicken thighs, and 2 rib-eye steaks from Argentina.

I immediately started using my vacuum sealer and portioned my food. For the beef, I applied some salt before sealing it.

After finishing portioning the meat, I pondered what to have for dinner, and I immediately thought of making a pizza. I prepared pizza dough and made enough to vacuum seal three more portions for another time.

Now let me tell you what i am going to cook with the meat

chicken thighs with baby potatoes:

Ingredients:

4 bone-in, skin-on chicken thighs
1 pound baby potatoes, washed and halved
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
Optional: paprika, lemon zest, or any other seasonings you like

Preheated oven to 200°C.

In a big bowl, mix baby potatoes, olive oil, minced garlic, dried thyme, salt, and pepper. You can add extra flavors like paprika or lemon zest if you want.
Toss the potatoes to coat them evenly with the seasonings and oil.
Season the chicken thighs with salt and pepper

Bake in the oven at 200°C for 35-45 minutes.

Rib eye

1 beef ribeye steak
Salt and freshly ground black pepper, to taste
2 cloves of garlic
Olive oil
Chimichurri sauce

Season the ribeye generously with salt and freshly ground black pepper on both sides. If you like, you can also rub minced garlic onto the steak for extra flavor.
Drizzle the steak with a bit of olive oil to prevent sticking.
Place the ribeye on the hot grill and cook for about 4-5 minutes per side for medium-rare.
Once the steak is cooked remove it from the grill and let it rest for about 5-10 minutes. If any of you follow my recipe please make a post and tag me

We buy in bulk now and then portion and marinade making meal times easier. I bought a lamb yesterday which usually lasts us the month. I have a great recipe for peri peri chicken fillets which I must get around to posting about next time I do the portioning which maybe next week.
