What to do when it’s a snowy blizzard out…

Afternoon everyone….

It was a very cold, wet, snowy blizzard like conditions here yesterday. I can’t complain though because it’s our first snowfall of the year over three inches.

Going out to shovel numerous times of heavy wet snow, left me not really wanting to move around a bunch of lumber in between shovelings.

Mom had a bunch of overripe bananas laying around, which she wouldn’t eat.

So…

She asked me to make banana bread with it. She says my banana bread is the best. What she doesn’t know is the recipe is from her mother….🤣🤣🤣

My mom is not a baker, or much of a cook for that matter. She has a handful of great dishes she makes, but overall she’s below par to be nice.

Me on the other hand, I enjoy creative things and cooking definitely fits my bill. I’m also very familiar with exact measurements since I’m a fine furniture builder, so baking fits my bill as well.

While I don’t enjoy baking as much as cooking, I do enjoy certain baking items.

This banana bread is one of them. It kinda meets both criterias for me. Exact, but with an element of creativity as well. Sure you can make just plain banana bread, but you can also ramp it up a bit. Add some chopped nuts, some chocolate chips or even some dried fruit.

Mom chose the chocolate chips this time. So that’s what I made.

Here is the recipe if you’d care to give it a try:

Banana bread grandmas version

Pre heat oven to 350 degrees F.

2 cups AP flour
1 tsp. Baking soda
1 tsp. Cinnamon
1 tsp. Pure vanilla extract
1/2 tsp. Salt
1 stick of butter melted
1 egg beaten
1/2 cup brown sugar
1/2 cup white sugar
4 very ripe bananas 3 if huge

I break up my bananas first and mash them with a fork. Then I add the cinnamon, vanilla and sugar. I mix that with a fork till incorporated. Then I add the melted butter, it should look like a consistent soupy mess. I then add the beaten egg and mix thoroughly.

In a separate bowl combine the flour, salt and baking soda. Mix it prior to adding it into the wet ingredients.

If you are going to ramp it up, this is where you would add you nuts, or chocolate chips. Just fold them in.

Grease your loaf pan with a little butter, then pour the batter in. Tap to level it out, then dip a scrapper blade into warm water and stick the center of the loaf. This will create a nice center line as it bakes.

All ovens are different, but it should be ready after 60 minutes in the oven. Check the center with a toothpick prior to removing. The toothpick should come out clean if it is done.

After a few minutes take it out of the loaf pan and let it cool completely on a baking rack. Slice it up and enjoy.

Yeah, banana bread are so easy to prepare. But my recipe is much simpler, with no cinnamon or brown sugar, and much less sugar!

I bake a banana bread version with sour cream that has a long shelf life but gets eaten well before it ages three days. 🍌🍌🍌😋

I love banana bread!! I will try this recipe sans the cinnamon, on account of not wanting to suffer...
