Himalayan Khukura and Jeera Rice - Nepali Chicken Curry and (slightly) Sweet Cumin Rice 🇳🇵

Chicken Curry is one popular dish all over the world. Different country have their own recipe for authentic chicken curry.
🇳🇵 So today I want to share a popular Nepali Chicken Curry and (slightly) Sweet Cumin Rice - Himalayan Khukura and Jeera Rice.
This Himalayan Khukura and Jeera Rice recipe is my friend's favorite version which she got when she traveled in the Himalayas as a photography traveler a couple of years ago. She was there in the mountains of Nepal and it was one of the most precious times traveled in her life. 📸
It is prepared with sauteed chicken and stir fry garlic, ginger, onions, chilies dipped in a tomato curry with varieties of spices and herbs. 🍛
Himalayan Khukura is typically served with steam basmati rice. 🍚
You can prepare it earlier and served it in a busy night then dinner is done and satisfy whole family or perfectly for dinner party as well. 🍽
Even if it take a bit time for the chicken to get soft, tender and absorb all the wonderful spices and other component broth but the end is well worth to cooked.
Today I'll served Himalayan Khukura with Sweet Jeera Rice and I'll adapted the recipe by cooked with Jasmin rice instead of basmati rice and cut down a lot of sugar portion sized. 😆
This sweet Jeera rice is full of aromatic flavors and makes an amazing side dish which so simple to preparation in a rice cooker.
Jeera Rice made from cumin (aka Jeera in Nepali language), turmeric, ginger, onion and garlic. It's such a simple way to lift up your rice side dish.
This simple and delicious Nepali style chicken curry is my favorite dish. 💛
I almost strict with the original recipe and just cut down the fresh coriander leaves because of he is not a big fan of them. I also cooking and prepare with my own instructions and methods.😁
So let's start cooking with me and see what's ingredients for Himalayan Khukura.
- 1 Kg Chicken
- 1 Onion
- 3 Tomato
- 1 Tablespoon garlic
- 1 tablespoon Ginger
- 3 chili
- 1 Tablespoon Cadarmon
- 1 Tablespoon Cumin
- 1 Tablespoon Coriander Seed
- 1 Tablespoon Black Pepper
- 5 Dried Curry Leave
- 5 Dried Chili
- 2 Bay Leaf
- 1 Tablespoon Curry Powder
- 1 Tablespoon Turmeric Powder
- 1 Tablespoon Paprika
- 1 Tablespoon Masala Powder
- 2 Tablespoon Himalayan Salt
- 1 Tablespoon Safflower Oil
- 250 ML Chicken Stock
What's ingredients for Sweet Jeera(cumin) Rice!
- 4 Cup Rice
- 5 Cup Water
- 1 Tablespoon Sugar
- 1 Tablespoon Garlic
- 3 Tablespoon Onion
- 1 Teaspoon Ginger
- 1 Teaspoon Jeera (Cumin)
- 1 Tablespoon Turmeric Powder
- 1 Tablespoon Safflower Oil
Vegetable Preparation!
- Cut the onion into small cube.
- Set the onion aside.
- Dice the tomato into the small cube.
- Set the tomato aside.
- Peel the garlic and mash it.
- Here the mash garlic.
- Peel the ginger and mash it.
- Set the ginger aside.
- Cut the chili.
All the veggie is ready!.
Sautéed the Chicken!
- Add the oil into hot pan and drop the chicken and let's the outside cook for both side.
- Set the Sautéed Chicken aside.
- Add more oil into the same pan and drop the garlic and ginger then stirred them until golden yellow.
- Add a bit oil and drop all the herbs.
- Whisk them for aroma fragrance smell.
- Drop the onion.
- Toss them together.
- Drop the tomato.
- Whisk them together.
- Add all spices.
- Toss them together.
- Add the chicken broth.
- Let's it boiled.
- Separated all the ingredients and broth then take away the seeds such as black pepper, cardamon and cumin seed. ( This is just my preferred because I don't want to bite at any hard seeds)😅
- The separation done!
It's not hard as it look but definitely well worth to separated them, trust me :) 💗
I still using them for my curry broth by drop them in the sieve cup.
- Put all the component back into the same pan.
- Add the chicken into the curry broth.
- Lower the heat.
- Add the Himalayan salt and chop chili.
- Take the skin from the chicken off and lid on and simmer which depending on how much curry broth you prefer.
While simmer the curry broth so let's cook the Jeera Rice.
- Rinse the rice and repeat 2 times more until water becomes clear and add the sugar.
- Add the oil into the hot pan and drop all the veggie, herbs and spices.
- And half water into the pan.
- Pour the water into the rice cooker.
- Cooked the rice following your rice cooker machine instructions.
Here the Jeera Rice!
- Plate the Jeera Rice! 💛
- Turn off the heat and served Himalayan Khukura.
Himalayan Khukura is Done!
It's absolutely perfect for cozy lunch.
This dish is truly super easy and seriously amazing taste!

Time to taste the tender chicken with is sautéed char a bit outside and soft inside. 😄
The curry broth was absolute delicious and full pack with flavor.
It's a perfect combination between Himalayan Khukura and Jeera Rice.
