Today I’m gonna show you how to prepare a memorial dish which is very trendy nowaday and its call Khao Phat Tad or Thai fried rice with pork in a large tray. An unlikely ordinary Fried Rice which brought you a huge plate of Fried Rice which served in a classic kitchen enamelware.

πŸ‡ΉπŸ‡­ Khao means Rice while Phat is to Stirred and Tad refers to Tray. πŸ”˜

πŸ‡ΉπŸ‡­ Khao Phat Tad just becomes popular a couple of years ago and spread across Thailand right now. This dish is the side effect of the Enamelware return to popular again because of people was overcome with nostalgia sensibility for their owns day at the past.

Back then every Thai family should have those beautiful enamelware in their household, especially the trays which I have them too. 😁

Enamelware was import from China back then with the signature floral and colorful prints. After a while Thailand was learned to produced those beautiful kitchenware by ourselves which make the local enamelware got cheaper and worldwide all over country.

As time goes by the aluminum, plastic, melamine and stainless steel replaced this classic enamel but recently the enamelware becomes trendy again then the vendors create many huge portion dish that suit well with this colorful enamelware and Khao Phat Tad is one among those.

Khao Phat Tad prepared with Thai steamed jasmine rice and contain with sliced of pork, egg, onions, garlic, tomatoes, Chinese broccoli and seasoning with soy sauce and a pinch of sugar then wok over high heat until its get slightly char and burnt a bit then put the slice of cucumber and Thai style fried egg beside and served with clear soup and fish sauce with chili as a dipping sauce plus an icy coca cola as optional. πŸ˜„

🍳 Kai Dow or Thai fried eggs are made crispy around the edges from an extremely hot deep fry but still keep runny yolk in the center and perfectly top on any one dish meal.

The characteristic of Khao Phat tad is served on Enamelware Tray and topped the tray with banana leaf. When hot food is placed on the banana leaf then the wax coating was melts and releasing the unique fragrance and give more flavorful delicious.

Khao Phat tad is super easy and not complicated to cook so let's start cooking with me!

What we need for khao Phat Tad!

Β 

  • 2 Cup Steam Jasmine Rice
  • 5 Chinese Broccoli
  • 1 Tomato
  • 1 onion
  • 5 Cloves Garlic
  • 100 Gram Pork loin
  • 4 Eggs
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Seasoning Soy Sauce
  • 1 Tablespoon Oyster Sauce
  • 5 Chili
  • 5 Garlic
  • 1 Tablespoon Fish Sauce
  • 1 tablespoon Lime Juice

How to make Khao Phat tad!

Fish sauce Preparation!

  • Drop lime juice and fish sauce into the bowl of sliced chili and garlic.

Let's make Kai Dow First!

  • Pour the vegetable into the wok over high heat.
  • Then drop the egg and fried it until the edge turn golden yellow.

Let's Wok!

  • Drop the garlic into a wok over high heat and whisk it quick until garlic turn golden yellow.
  • Drop the pork and cooked it well.

  • Move the pork to one side of the wok and then drop the egg into the empty side and whirl the egg up and let it cook for a few seconds.
    Β

  • Then start to mix it up and drop the rice and give it a quick stir.

  • Add oyster sauce, soy sauce, seasoning soy sauce and a pinch of sugar (optional) and continue stir fried.

  • Add chopped stem of Chinese broccoli and onions and whisk it until the vegetables wilt.

  • Add tomato and toss the Chinese broccoli leaves and stir it a few more seconds.
