Okra(ladies' finger) curry
Okra is a very good vegetable. It can even be eaten raw when it is still growing. it is very good for the diabetics as it reduces blood sugar levels if aeaten raw but be careful if you are taking medicines.
Here is a simple curry that can be eaten with relish.
Ingredients
- Okra/ladies' finger - 6 or 7
- Coconut and green chilly paste - a cup
- Red chilly, mustard seeds and oil for seasoning
- Curd - about a few tablespoons
- Salt
Please note - no water is required except maybe to dilute the curd or for grinding the coconut.
Method
- Slice the okra after washing. If we wash and then slice, the goo will interfere.
- Slice as shown in the picture.
- Heat a wok and season the mustard seeds and chilly. You can use any vegetable oil.
- Add the okra and powder salt and stir fry till it turns brown.
- Add the coconut paste and mix well.
- Transfer to the serving bowl
- Take about this much of curd and dilute with a bit of water.
- Add the curd to the dish after it cools down a bit otherwise the curd will curdle. Mix well and serve with rice.
In Kerala, it is called Vendakka pachady
