My Specialized and Savory Hamonada and Zucchini Pesto
Hello foodie lovers! Last August 13 was my 67th birthday, praise God!I was alone at home because I need to sew Antonia's 5 sets of uniforms. Well, she's a transferee so I need to go back home to work on it.
Antonia's mom sent me a cash gift since she's abroad and my son-in-law in the other city send their greetings saying that we'll celebrate it together with his birthday which was yesterdays ( August 30) My daughter planned to have a food delivery but I told her that I will just cook our iconic Hamonada Espesyal and Zucchini Pesto. We have a house renovation going on that spending too much on food preparation is impractical!
My daughter readily agreed since the two recipes are their favorites too. Her hubby is looking forward to these on our table especially on special occasions!

Hamonada Espesyal
Ingredients:
2 Kilos pork thigh (whole)
2 Cloves Garlic, minced
2 Onion bulbs
3 Sticks Spring Onions
1 can sliced pineapple
2 large potatoes, quartered
3 Ripe Bananas, halved
2 large bell peppers
1 pack Tomato paste
1/2 cup vinegar
1/2 cup soy sauce
1/4 cup brown sugar
1 tsp black pepper
1 tsp atsuete
5 leaves of laurel
5 star anis
Salt and seasoning to taste
Preparation
Wash the meat thoroughly and drain then put it in your pressure cooker.
Add all the ingredients on top except the potatoes,ripe bananas and sliced pineapple but you may add the juice to enhance the flavor.
Cover the pressure cooker tightly for around 30 minutes.
While waiting, fry the potatoes and ripe bananas then add them and let it simmer for another 30 minutes.
You will know that it's well done when the sauce has thickened forming into a saucy gravy!
That's now the finished product! It's best when served hot!.
Zucchini Pesto
Ingredients:
500 gms zucchini pasta
1 can Century Tuna flakes in natural oil
1 can button mushrooms
1 clove garlic, minced
1 onion bulb, finely chopped
1 Red bell pepper, chopped
1 carrot, sliced in fine cubes
2 pouches Nestle Cream
1 sachet Red Pesto
1 sachet mayonnaise
1 sachet Ham Sandwich Spread
1 sachet Cheese Pimento
Black pepper
Cooking oil
Salt and seasonings to taste
Preparation:
Boil the pasta for 15 minutes or until tender but not soggy. Remove from heat and drain. Set aside
In a wok, add enough oil then add the sliced onions, garlic. Next, add the tuna flakes and button mushrooms then add the bell peppers and carrots stirring occasionally.
Stirring, add the red pesto, Nestle cream, mayonnaise, ham sandwich spread and cheese pimiento. Add salt and seasonings to taste. Pour the sauce over the cooked pasta.
There ... What a creamy zucchini pesto!
Of course, my daughter bought Ube Flan for our birthday cake and some silvanas for our dessert.
To top it all, I got a special delivery from my daughter just this afternoon while making my draft. It was overwhelming!

Really a different way of making usual pesto, nice, it's seems a long recipe but really yummy, the pesto look really creamy
