Recipe and how to cook sautéed eggplant in purple soy sauce
Greetings everyone 🙏, this is my first post in this community, and I'm going to try to share a little about the dishes that I know and I happened to cook this afternoon
The dish that I cooked earlier was stir-fried eggplant in soy sauce, and the eggplant that I used this time is a type of purple eggplant that is easy to get in any part of the country
And you need to know, that besides being able to make a delicious side dish, it turns out that this purple eggplant is also beneficial for human health, some of the benefits that I know of include the following;
Useful for lowering cholesterol levels in the body
Helps to lighten excess body weight
As well as increasing endurance and also bone health
The content of vitamins and antioxidants contained in eggplant is really very useful, isn't it
Let's continue our discussion again, first of all prepare some of the ingredients that will be used to cook this soy sauce eggplant stir-fry, here's a list of ingredients that you should prepare
ingredient;
- purple eggplant
- 2 Spring onions
- 3 cloves of garlic
- 4 red chilies (green chilies)
- Leek
- 150 ml of water
- Cooking oil
- tomato
Spice:
- salty soy sauce
- sweet soy sauce
- powder broth
- sugar
Here I choose some purple eggplants, then I wash them, then after that I cut them according to taste and fry the eggplants until they are half cooked, then drain.
The next step before starting to cook is, take 2 or 3 shallots (according to taste) then slice them, followed by 2 cloves of garlic, and chop the garlic as shown in my picture above
Likewise with tomatoes, and other ingredients, here I use two types of chilies at once, namely red chilies and green chilies, you can also choose one of them to cook, and don't forget to also cut the prepared spring onions earlier, I forgot to take a picture🙏
And after all the ingredients are ready, then start cooking by following these steps
heat a pan with cooking oil, and sauté the shallots and garlic until they smell good
Add the eggplant, add water and cook until it boils
Add seasonings, such as soy sauce and salt, and don't forget to taste it
Finally, add the chilies and green onions, stir well and wait until all the spices are absorbed
And after that, all you have to do is lift the dish onto a plate and serve it
So this is the final result, and in my country this dish is often used as a side dish for lunch and it is even better when eaten with hot rice, if you are interested you can try it yourself at home
