Healing Vegetable & Beef Soup | A very simple yet effective recipe.

The weather is changing rapidly, it's hot during the day but cold at night. Children are catching cold fevers now and then and my son is not an exception. He suffered from tonsils two weeks ago.

It was a challenge to feed him during that time. I knew I need something nutritious, tasty, easy to chew, and healing to help him get well quickly along with the medications.

And what would be better than this healing beef vegetable soup?


Let me share my recipe.

Ingredients:

  • 250gm of beef stew meat
  • 1 tablespoon of olive oil
  • 2/3 small onions
  • 3/4 garlic cloves
  • 2 pieces of ginger (you can use powder as well)
  • 2 green onion
  • 2 bay leaf
  • 2 cloves (+ Star anise if you have)
  • Vegetables (I took potatoes, capsicum, carrots, and a turnip). You can add any kind of vegetable you like.
  • Slat
  • Chilli (if you feel necessary)
  • A pinch of turmeric powder

I would like to mention that I have taken the spices almost double the amount than the regular recipe. It's because we usually add a lot of spices to our food and if I add a regular amount it would taste flat to us. You can add it proportionately according to your taste.


The step-by-step process.

The recipe is pretty simple. Add all the ingredients to a large pot and let it cook on a slow flame for at least an hour.

The vegetables are already looking good. Add whatever you like or are available to you, cut them accordingly, and wash to prepare for the cooking process.

Add the beef and the spices and mix them properly. You can sear the beef and garlic before putting them into the pan. It would be much more flavourful that way. But if you are in a hurry then follow this, it would not bad at all.

After half an hour give it a slow mix so that all the ingredients can cook thoroughly.

It usually takes 1/2 an hour to cook and another 1/2 to get a smooth texture if you cook in low heat. But if you are using a pressure cooker or high heat it will only take a few minutes in a cooker and 15-20 minutes an hour in high heat. I would suggest cooking for an hour to get the perfect texture and best taste.

This soup is packed with garlic, which is anti-inflammatory, full of antioxidants and vitamins, and acts like a natural antibiotic. Also, it's tasty, easy to chew, and very healthy.

For the fact that cloves, ginger and garlic are in the soup, I am convinced its a healing soup which is good for this weather. A fantastic recipe! I will try it out. Thank you for sharing your recipe!

Chilli (if you feel necessary)

Yes. Almost always. This is how I/we like it. Either chili pepper, chili powder, chili sauce or chili paste. My favorite chili sauce is the Erős Pista. I put mostly Erős Pista into soups. Sometimes Piros Arany (Red Gold), which is a chili paste. And probably most Hungarians too.

Our weather here in the Philippines also gets hotter during the day,( and with a little random drizzle), which leads to our kids catching colds easily.

I understand you too much about using more spices than you should when seasoning food hahaha, in my family we also share this, it's good to know that we are not the only ones.
