Egg white Pudding - Nothing is easier than this.

This was my first time making pudding with only egg white. I was not sure if it would be fluffy without the yolk. It came out perfect. Not so soft yet it was worth enough to try.

Yesterday, my niece came to visit me with her mom. I know how much she loves egg pudding. But for her obesity and other health reason, the doctor suggested avoiding egg yolk. So I thought to make egg white pudding.

I don't know if this is a so-called recipe or I should take the credit to invest it. hahaha...

I didn't add any flavor or any spice as it's for the kids. But you can add what you like or some fruits maybe, on the top.

Let me share with you the process.

Separating the yolks.

I took three eggs for two servings.

Making the caramel.

I'm not good at making caramel with sugar, every time it gets burnt. But this time it came out perfect.

Beating the egg white.

I used a manual beater and beat them in a mug because I was in a hurry.

Set the caramel on the bowl.

Look, the crystallized caramel. Yey, I made it.

Pouring the egg white, it looks so fluffy!

Cooking it over boiling water.

Don't mind me seeing the plastic wrap over the top. They were in a hurry, will leave in an hour. So I didn't get time to prepare my pudding utensils.

This is how it looks.

Not so appealing. I was feeling like if this would be presentable or not. But when I flipped it over, I was surprised to see the shiny caramel color.

It came out perfect. And my niece liked it so much. Seeing her happy face made me feel great.

Without any color, flavor, or spice the pudding seems a little dull to me. But I guess, this is perfect for a kid. Also, the caramel looks so gorgeous and delicious in taste that it made the pudding taste great.
