Vegan meat for meatless monday (soya meat 🇱🇰 style)

Welcome to Meatless Monday, a day where we can all come together to make a positive impact on our health, the environment, and animals. Today, we have a delicious and nutritious option for you - a soy meat curry! Made with tender chunks of soy protein and simmered in a fragrant blend of spices, this curry is not only a satisfying and filling meal, but it's also packed with protein and other essential nutrients.

By choosing to go meatless on Mondays, we can all do our part in reducing our carbon footprint and promoting sustainability. So, let's embrace the power of plant-based eating and enjoy this flavorful and wholesome dish together.

Ingredients:

100h Soya meat

Oil (3 tbsp)

Curry leaves (5-6 leaves)

Onion (1 large, thinly sliced)

Green chillies (3, chopped)

Ginger (1 tbsp, minced)

Tomatoes (2 medium, cut into wedges)

Red chilli powder (1 tsp)

Roasted curry powder (1 tbsp)

Pepper (1/2 tsp)

Mustard (1/2 tsp)

Salt (to taste)

To prepare soya meat for use in a curry,

Boild two cups of water and add the soy meat to it.

Cover the pot with a lid and let the soy meat soak for five minutes, or until the chunks expand and become spongy.

Drain the excess water from the pot by placing it in a sink and tilting it to pour out the water, leaving only the soy chunks.

Rinse the soy chunks with cold water for a few seconds to remove residual heat.

Take a handful of soy chunks and squeeze out any remaining water.

Be cautious not to burn your hands with any remaining heat from the excess water. Set the squeezed soy chunks aside.

Instructions for curry

Heat a pan over low-medium heat and add oil, mustard , curry leaves, onion, garlic , green chillies, ginger, and tomatoes.

Cook until the onions and other ingredients turn translucent.

Add the red chilli powder, pepper, roasted curry powder Mix well and cook for 3 minutes.

And then add the soya meat at last and add half a cup water.

Add the soya meat to the tomato sauce if you want and mix well. (Here I didn't use tomato sauce )

Taste and adjust seasoning if needed.

Cook until the sauce coats the meat with a little gravy.
