Simple Vegan Jollof Rice

Today is one of those days when I wake up and don't feel like doing anything; all I want to do is lay on my bed and snack on different healthy snacks while watching a movie.
But that's not possible because I am a mom, and I have to cook for my kids. Since I didn't have the vibe to cook, I made a simple jollof rice.
Ingredients
2 cups of rice
9 pieces of fresh tomato
4 pieces of fresh pepper
1 large spring onion
1 clove of garlic
2 pieces of large carrots
3 leaves of bay leaf
1-inch piece of ginger
1/2 teaspoon turmeric
1/2 teaspoon thyme
55 g of lettuce (for garnishing)
Salt to taste
Preparation
I started by washing my rice, and I placed it in a pot with sufficient water on medium heat and allowed it to boil for 10 minutes.
While the rice was still on fire, I went ahead to blend my tomatoes, pepper, garlic, ginger and half portion of the onion and set aside.
Then I went ahead to chopped my carrots, spring onion and the other half portion of the onion
By this time my rice has boiled, I dropped it from the fire and drained the water, and set aside
Then I placed my pot on heat, added my oil and allowed it to get hot, then I added my chopped onion and allowed it to saute
After that I added my tomatoes puree and allowed it to fry to 3 minutes and I added my spring onion and allowed it to fry for another one minute
After that I poured water that would be enough to cook the rice, then I added my bay leaves and salt to taste. Then cover it for it to boil.
After it boiled, I added my rice to it and stirred. I covered the pot and allowed the water to dry from the rice.
Then I reduced the heat to low heat, the I added my, chopped carrots and spring onion and covered the pot again and allowed it to steam for two minutes.
After this I dropped it from the fire and food is ready 🤤
I chopped my lettuce and tomato to garnish it
