The truth is that a plant-based diet is not 100% low in calories, but it usually contains more nutrients per calorie and a lot of fiber, I tell you this because some people choose to eat plants only as a strategy to lose weight, but it is important to clarify that when we follow a vegan diet, we are thinking about our health, consuming nutritious and delicious foods, which They will help us increase our energy and strengthen our health.

Well friends, about my diet I can tell you that I am almost vegetarian, I say that I am almost vegetarian, because I eat beef and fish once a week, and rarely chicken and pork, but always in Vegetable salads are present on my plate.

I am a man raised in the countryside, in fact I have my farm, where I grow vegetables such as zucchini, cucumbers, bananas, onions and other vegetables, so I don't worry much about consuming meat, because just by preparing a soup of legumes and vegetables I feel good. I tell you that on my farm I take several green bananas with which I prepare a dough composed of zucchini, carrots, parsley, with this dough I prepare some cakes that I cook in a pan. The truth is that these cakes are very delicious and apart from their flavor, they are very nutritious, sometimes I add a little bran to the dough, since bran is very good for intestinal problems such as constipation.

To make these vegetable pancakes, first I mash the zucchini and banana and make a mixed dough with oats. It is important to knead these ingredients well until you obtain a dough with a thick consistency.

Ingredients for two small cakes.

  • 1/4 green banana
  • 15 g carrot
  • 15 g of zucchini
  • A small branch of parsley
  • A tablespoon of bran
  • Salt to taste

Process:

  • The first thing I will do is chop the carrot and banana into small pieces and cook them for a few minutes in the microwave. I will cook them so that they soften a little and then crush them:

  • Now I am going to heat the pan and then place the vegetable cake. Once the cake is placed, I will turn it several times until the dough loses liquid and browns a little, making sure that it is not hard, ideally it should be soft. :

Well friends, this vegetable cake is very tasty, its flavor feels somewhat sweet, this sweet flavor is provided by the zucchini. You can eat this cake with some wheels of fresh tomato, or simply with a salad of lettuce, tomato and cucumber, as you prefer, what I can assure you is that this cake is very tasty and has many vitamins such as vitamin ** A** that the carrot provides, in addition to the potassium from the banana and on the other hand there is the zucchini that contains folic acid, potassium, iron, manganese, so that we can consider this cake as a powerful ally to take care of our health . .
