Stir-fried Spicy Kale Sambal Terasi
Water spinach or often known as kale, is a mainstay of my family's menu at home. This vegetable is my favorite vegetable at home, processed into any dish is very tasty. Especially sauteed with some spices that make it have a spicy, sweet, savory taste and can certainly be enjoyed in any condition.
Have you ever heard of shrimp paste? Terasi is one of the most famous food ingredients in Indonesia, usually this ingredient is made into chili sauce, or even added to various traditional food dishes in Indonesia. In fact, terasi is a favorite menu for many people to enjoy lunch and even family dinners at home.
Terasi is processed shrimp or fish that is fermented, has a strong odor and distinctive taste. So adding it to any dish can make it more delicious.
Stir-fried Kale Seasoned With Terasi
This time I will invite you to cook kale with stir-fry sambal terasi, processed with terasi seasoning using fresh chili peppers and other ingredients. It looks simple but believe me this is a specialty of my region that has never been forgotten. In fact, I think this menu alone with salted fish added with warm white rice becomes very delicious. Hehe, maybe for some people who have tried it will be familiar with one of these ingredients.
Ingredients Used
1 piece (3 grams) shrimp paste
1 tomato
8 cloves shallots
2 cloves of garlic
6 red chili peppers
6 cayenne pepper
¼ teaspoon salt
Cooking Procedure
The first step is to chop the onions, chilies, tomatoes, don't forget to add shrimp paste too and then blend until smooth.
Next clean the kale, or water spinach take the leaves of the stems that are still soft.
Do it until all is done, make sure all your ingredients are washed thoroughly, usually I soak them briefly with salt water.
Next heat the cooking oil, then add the spices that have been mashed cook until boiling does not smell of chili.
Add kale vegetables, then stir evenly to make sure everything is wilted.
Then season with salt, cook until the kale is perfectly cooked.
Result
Stir-fried kale seasoned with shrimp paste is ready to be served, very suitable to be enjoyed with warm rice, or even not infrequently I can enjoy it directly. Well for this measure I get 2 servings of stir-fried kale. This portion is quite a lot and enjoyed with naabati protein such as tofu is also quite good you can vary whatever it is. But still rice is the main companion to enjoy this dish.
The taste is quite appetizing, spicy, gutih and natural sweetness from the kangkung vegetables. As I said above this is my favorite kale stir fry at home.

In our country the green vegetables is called kangkong and it's typically cooked with soy souce. Its nice to see a another traditional way of cooking of an another country ☺️ i would definitely try this way of cooking.
Well really we usually cook it with sauri seasoning almost similar to soy sauce which has the flavor and aromatics of oyster sauce. Very good, but with sambal terasi also uploads the spicy savory taste delicious!

By the way that isn't kale, that's water spinach. A kale would look something like this
You are absolutely right, this is what people call water spinach or water spinach. But in my country we are used to calling it kangkung
I thought you guys would call it rumpuen? because Indonesian calls it kangkung and that honestly translates to water spinach. Never heard any of them calls them Kale either
