Small Tuna Fish with Sambal Lado
Tuna is in season in our area, and the price is very cheap. Usually the size of this fish is very diverse in traditional markets from small to large. Since I wanted to make red lado, I was happy with the small size of the fish. This simple dish is one that I often serve at home for lunch or dinner with my family.
Tuna fish lado sambal is a small processed fish that I prepare for lunch at home. I prepare this menu as a side dish for lunch using white rice. Usually, lado fish is identical to bright red chili sauce which has a spicy flavor. However, there are also many people who make it sweet by adding a little sugar like I did this time. So instead of being curious, let's make this simple recipe below.
Ingredients Needed
Main ingredients
1 pandan leaf
5 curry leaves
1 minced shallot clove
1 teaspoon salt
1 tablespoon sugar
Ground Spices
2 tomatoes
5 cloves shallots
2 cloves of garlic
Well, here the fish that I use has been cleaned first then I marinate it with a tablespoon of salt and also half a part of lime juice. I let it sit for about 15 minutes until the fish is fully absorbed.
Cooking Procedure
Prepare the spices, then cut the spices into small pieces to make it easier to blend.
Blend with enough water, until the spices are evenly distributed.
Prepare the fish that has been marinated with salt then fry with enough hot oil until brownish yellow.
While waiting for the fish to finish frying in another pan I prepare 5 tablespoons of cooking oil then I saute chopped shallots, curry leaves and pandan leaves.
After the ingredients are wilted, add the ground spices that have been blended.
After cooking for a while add a little water, here I add the blender so that I spend the remaining spices that stick to the blender.
Cook the lado sauce until it shrinks, then season with salt and a tablespoon of sugar.
After the correction of the taste is right, add the fish that has been fried, cook for a while so that the spices are absorbed.
Result
Serve the lado tuna in a plate then enjoy with warm white rice. Look at the red blush with the usual tuna fish looks very charming when combined. Makes me eat more later.
Feel the spicy sensation and a little sweetness in this dish. What I really like about sambal is that the aroma and flavor are very authentic. I often make this dish at home besides easy this dish is also very tasty. And in my house everyone loves it, including the kids they even enjoy it even though there is a little spicy flavor.

Very delicious, usually when I make sambalado I don't use pandan leaves. Next I will try adding pandan leaves to the sambal balado. Thank you for sharing @nurfay
Pandan and curry leaves add a very fragrant aroma when cooking chili lado. I really like it when I sauté it!
