Sambal Goreng Chicken Gizzard with Authentic Flavor
Hi foodies lovers, Today I will invite you to prepare one of the typical dishes in Indonesia. This dish is made from the internal organs of the chicken in the form of chicken gizzards. Now chicken gizzards are often incorporated in Indonesian dishes. However, there are some other dishes that are not put together. Usually this dish is a favorite and most sought after by many people during certain events at home.
Liver Gizzard Fried Sambal
Hati ampela sambal goreng is one of the home-cooked dishes made from chicken liver and gizzards. Then stirred with spicy chili sauce that tends to be sweet and savory. Chili and tomato pieces are also one of the characteristics of this sauce so that the color is more attractive and also very tasty. In addition to liver gizzards as the main ingredient, this recipe also uses potatoes as a complementary ingredient but if you don't like potatoes you can skip it.
Instead of you being curious about the preparation, here's a simple recipe!.
Ingredients Used
100 grams of mini potatoes
1 teaspoon salt
3 bay leaves
½ onion
3 tomatoes
8 red chili peppers
1 clove shallots
5 cloves shallots
6 red chili peppers
½ piece of roasted shrimp paste
Here I use the liver gizzard that has been boiled. Now this is to eliminate the fishy odor of chicken liver and gizzards. When boiled, use bay leaves and pandan leaves for maximum results.
Cooking Procedure
Peel the skin of the potatoes and then cut the potatoes into small pieces or according to taste.
Then fry the potatoes until brownish yellow or until the potatoes are crisp.
While waiting for the potatoes to be fried I prepare the liver gizzards, cut into small squares or according to your taste.
Chop the onion into small squares or according to your taste, then chop the shallots as well.
Cut the tomatoes into small squares, then chop the red chilies into slices. After all the ingredients are ready, continue with preparing the spices.
Puree the spices as finely as possible, add water when pureeing so that the results are maximized.
Prepare 3 tablespoons of goeeng oil then saute the onions and shallots and bay leaves. Then add the ground spices, cook until the water shrinks slightly.
Add salt and then add the liver gizzard that has been cut earlier, stir until evenly distributed.
Cook until the sauce shrinks then add the chili and tomato pieces.
Here I add 1 tablespoon of sweet soy sauce, if you don't like it you can skip it.
Cook until everything has shrunk, making sure that the oil will come out on the surface of the pan.
add the potatoes that have been fried earlier. Stir until evenly distributed and don't forget to correct the taste, cook for a while longer then turn off the stove.
Result
Sambal goreng ayam ampela liver is ready to serve, serve as your family meal menu at home. Usually I myself make sambal goreng chicken gizzard liver when there is a certain event at home this is because a lot of chicken gizzard liver is idle so processing it back into one more additional menu is my mainstay.
This dish is perfect to eat with warm white rice as a side dish to enjoy lunch or even dinner. The taste is sweet and savory and also spicy combined well. Now tips for you avoid frying the chicken gizzards when making fried chili sauce because it will be hard.
