Rendang Tempeh As a Delicious Dish At Home
Rendang is a type of food that is very global. This rendang originally comes from the city of Padang, but there are various types of rendang in Indonesia and now there are many variations of cooking methods that are different from the original recipe. Well, if you look at the typical rendang from Minang, the color is a bit blackish, but they very rarely have rendang made from vegan ingredients.
As knowledge develops, many people modify rendang by using main ingredients other than meat. So today I will make rendang with tempeh, as we know tempeh is a processed food made from soybeans. Tempeh has a good texture even if cooked for a long time.
So, the tempe rendang that I make includes simple ingredients, and the cooking process is very fast. This is different from rendang in general, where the cooking process takes almost 3 hours, sometimes even more. Cooking tempe rendang only takes 30 minutes, you will find the delicious rendang texture.
Materials Used
2 lime leaves
1 liter of thick coconut milk
1 star anise flower
2 cardamom pods
1 pandan leaf
Ground Spices
5 cayenne peppers
10 red onion cloves
3 cloves of garlic
to taste nutmeg
1 stalk lemongrass leaves
1 candlenut
2 cm galangal
In fact, when cooking rendang, we generally use pieces of turmeric leaves to strengthen the aroma and taste of the rendang. However, today I didn't have it at all, as a result I didn't use it. So, if you have it, you can add pieces of turmeric leaves to the spices in the rendang. In terms of quality, the taste is still very strong in the rendang category in general even without using turmeric leaves.
Cooking Procedure
Prepare the ground spices, then cut them into several parts so that they are easy to grind. Put it in a blender, add water and puree.
Well, because I forgot to add the lemongrass, then I chopped the lemongrass and added it to the ground spices, then ground it again.
Cut the square tempeh into 2 parts then divide into triangles or according to your taste.
Once finished, add salt, then marinate for approximately 3 minutes.
Saute the shallots, cardamom and star anise flowers and pandan leaves in a little cooking oil, then add the ground spices. Add chopped lime leaves.
Cook the spices until cooked, or until they boil, then add the tempeh and cook briefly.
Add all the coconut milk and cook the rendang until all the spices are reduced.
So after 15 minutes the sauce in the rendang started to reduce, I added aren sugar and salt.
Cook until the rendang is dry, so make sure it is completely dry so the rendang is delicious.
Results
Rendang is ready to be served, taste vegan rendang with an extraordinary sensation. Sweet and spicy taste with lots of spices, very suitable to be enjoyed with warm white rice. The extraordinary aroma of rendang combined with abundant rendang seasoning is enough to make the taste of bland tempeh become like vegan meat.
This is a dish with extraordinary taste, did you know this is the first time I made tempeh rendang. And I think this is very delicious, the rendang spices in the tempeh are absorbed perfectly. What's special about rendang is the aroma and characteristics of the many spices and the taste of this spice is very delicious. Even when cooked the drier it becomes more delicious.
