Purple Sweet Potato with Spicy Aren Sugar Cuko Sauce
Hi vegan lovers, today I will invite you to prepare a simple recipe for sweet potatoes, of course this is the first time I have tried it. Again, I found this recipe from social media that I have been following for a long time.
Actually, this recipe has been on my phone for a very long time, but I had trouble getting purple sweet potatoes yesterday. So when I found it I was very enthusiastic to try it again. Well processed sweet potatoes like this the first time I tried, it turns out sweet potatoes can be processed into savory salty foods, usually I often process them into sweet dishes at home.
So here I will invite you to prepare fried sweet potatoes with palm sugar cuko sauce. See below step by step preparation is very easy to prepare!.
Ingredients
100 grams sweet potato
100 grams tapioca flour
120 ml water
½ teaspoon ground pepper
Salt to taste
Scallions and sop leaves to taste
Cuko Sauce Ingredients
150 grams palm sugar
2 cloves of garlic
Cooking Procedure
Blend the boiled sweet potato with 120 ml of water, then blend until smooth.
Then strain the sweet potato that has been blended in another container, make sure everything is slowly until it is perfectly filtered.
Next, mix the dry ingredients in the form of wheat flour and tapioca, stirring both until evenly mixed.
Next, coarsely chop the spring onions and soup leaves then add them to the dry flour.
Add pepper and also salt, stir both until well mixed.
Next, add the strained sweet potato juice little by little.
Knead the dough until it is no longer sticky in the hand, make sure the texture is soft not too hard.
Round the dough or make an elongated shape according to your taste.
Next, boil the dough in boiling water until everything is cooked normally if cooked it will float to the top of the water surface then remove and drain.
Next, fry the dough over low heat until golden brown.
Next, prepare the ingredients for the cuko sauce, Grind the garlic and green cayenne pepper, just grind it roughly.
Next cook the sauce using 100ml of water then add all the ingredients, cook until thickened don't forget to add a little salt and the sauce is ready to use.
Serving Suggestion
Serve the sweet potato that has been fried on a plate, well it should be served by cutting several parts so that it is easy to enjoy. Then pour the cuko sauce on top, now it is recommended to enjoy it with this sauce because the combination of the two compositions is very suitable. The savory taste of the sweet potato batter that has been fried blends perfectly with the cuko sauce which has a sweet spicy taste with a fragrant garlic aroma.

Purple sweet potatoes have many types and I think this is the most intense and the color is very pretty after processing.
