Old Recipe Fashioned Young Mango Rujak Tek Tek

Young mango is a fruit that has a crunchy texture and is really sour when eaten directly. However, there are also some mangoes that are not sour, usually the young mangoes that we process like this have an unusually sour taste so they are very difficult to enjoy directly.

This time I will invite you to prepare young mangoes in a very easy way. Of course vegan without a mixture of non-vegan ingredients, we call this processed young mango the mango tek tek. It tastes really delicious after being prepared with a mixture of several simple ingredients. Young mango tek tek is a term we often mention, I often make preparations of young mango like this. I don't know why the fresh taste makes me more enthusiastic during the day, not infrequently I even enjoy it at night. Still, you have to condition your stomach when enjoying spicy, sour and sweet dishes. However, I highly recommend enjoying this when the sun is hot during the day, wow the sensation is much better!

Here are the preparations you need to make when making this dish, of course without cooking it like making a salad.




Materials Used

1 young mango
Enough lemon juice
1 red chili
6 cayenne peppers
2 tablespoons granulated sugar
1 tablespoon salt




Creation Process


Step 1


Peel the skin of the mango until clean, because this is a young mango, just peel it thinly so that the taste will be better.

Step 2


After peeling, chop into small pieces with a long knife. Well, usually in our local language we call it tek tek.

Step 3


If it has been chopped, add salt then stir with the salt until evenly mixed.

Step 4


Marinate briefly, then knead the mango with the salt until the sour water comes out of the mango. And the mango also has a softer texture and is really delicious. After marinating, then wash it several times until you get good results.

Step 5


In a mortar, prepare granulated sugar then grind granulated sugar with cayenne pepper.

Step 6


Mix with the mango, then finely chop the red chilies and add them to the mango.

Lastly, add lemon juice according to taste. Then let it sit until the mango releases water, so here I let it sit for approximately 30 minutes.

It's surely have a cool taste, I never see mango Tek Tek before to my eyes looks like a mago sald or soup, it's a interesting recipe I really don't know how many recipes exists with mango, I want to know more recipes about it also if it's hard to find it in my country 😥
