Oat Porridge Spinach and Sweet Potato Combination

A healthy, nutritious and delicious breakfast is perfect to complete our beautiful morning.




The weather is very sunny today, I don't know why I woke up this morning very excited and immediately checked what was in my nightstand box. Today is very special I woke up very excited, I have to start with a good breakfast for my body. By utilizing what ingredients are at home I intend to make soup. This time not with rice, I had eaten quite a lot yesterday when I met with my friends, so I had to neutralize my body with more nutritious food today.

The idea came to me when I saw oats on the nightstand, and I had some vegetables in the fridge. I thought making it into porridge like soup would be more special but again, this time instead of rice I tried to make it with whole oats.




Oat Porridge

Vegetable oat porridge is a combination of spinach and sweet potato mixed with oats. Made like porridge with some other spices that make this breakfast rich in benefits is certainly very good to start the morning. This porridge is inspired by a typical porridge from one of the regions in my country. However, the porridge is not vegan, so modifying the porridge made this special vegetable oat porridge bowl.




Ingredients Used

20 grams of whole oats
10 spinach leaves
1 sweet potato,
1 lemongrass stalk,
1 stalk of spring onion,
onion to taste,
½ teaspoon salt




Making Procedure


Step 1


Prepare the sweet potatoes, peel off the skin then clean and cut into small squares like cubes.

Step 2


Cut the other ingredients spring onion and onion according to taste.

Step 3


The ingredients have been prepared all the time to cook, first I boiled sweet potatoes with 500 ml of water.

Step 4


If the sweet potato starts to soften I season it with salt and also lemongrasswhich is cut into 2 parts and add onion.

Step 5


Add the chopped green onion, then add the oats and stir.

Step 6


Cook the oats and all ingredients until soft, then season to taste with pepper to taste. Finally add the spinach leaves, then cook until everything is soft and ready to enjoy.

This breakfast is ready to serve oat porridge with a combination of green chicken vegetables combined with orange sweet potatoes. I really like the texture of all the ingredients combined with the oats to be very tasty, of course, soft with the combination of sweet potatoes and spinach. It's so nice to be able to serve a quality breakfast at home. Of course, the presentation reminds me of when I had breakfast outside when traveling, the breakfast must be with oats.

You know oats with a combination of ingredients like this is the first time for me, but the taste has really made me fall in love. I think this will be a special breakfast in the future, of course because the taste is delicious, savory and salty is very fitting. Well if you want spicy you can add a little pepper powder in it everything will be very delicious!.

Today's breakfast I finished it without any leftovers, well this recipe is enough for two servings, for those of you who like this porridge try making it I'm sure you will like it. The porridge is really fresh and makes you fall in love!.

Thank you so much for sharing this recipe! Since I was a child and on rare occasions I have seen sweet potatoes in the markets here, it is not a common vegetable in Venezuelan cuisine but I have always wanted to try it; I am also desperate to learn how to cook healthy dishes but vegetarian and vegan, for now I only know how to make soups, creams and some sautéed dishes.
