Galangal Fried Chicken

Fried spiced chicken is a specialty for us at home. Enjoyed as a special side dish makes this fried chicken the most popular at home.




As someone who loves chicken dishes, I am very happy with this chicken dish. I have previously shared one of the recipes special fried chicken with red and green chili sauce. But this time I am showing you a special galangal fried chicken for you to make with your family at home.




Kalasan Seasoned Fried Chicken

Ayam goreng bumbu kalasan is a very popular fried chicken dish in our area. This chicken is identically called ayam goreng bulu (feather fried chicken), because of the fine feathers created from grated galangal. Now that characteristic is what makes many people love it. Including in my house, almost all of them like the preparation of this fried chicken so that this chicken during certain events must be served at my house.

Well actually I have been very long wanting to show you the recipe of spices and what ingredients are added in this fried chicken so that it tastes delicious and is the target of many people. Here are the preparation steps!.




Materials Used


Main Ingredients

1 kg fresh chicken
1 teaspoon salt
1 lime
100 grams grated galangal
4 pandan leaves
5 bay leaves

Fine Seasoning

50 grams grated coconut
1 hazelnut
10 cm turmeric
3 cloves garlic
3 cloves shallot
1 teaspoon coriander




Cooking Procedure


Step 1


Marinate the chicken first with salt and also lime leave it for 15 minutes.

Step 2


Add in the wok and then add in the bay leaves and pandan leaves.

Step 3


Add the galangal that has been grated in the pan earlier, we like it so much we add in large quantities.

Step 4


Puree the spices, mix the coconut in the spices then blend until smooth.

Step 5


Once smooth, add it to the wok and stir everything together until evenly combined.

Step 6


Cook the chicken first until the water shrinks. Do not add water occasionally, let it cook evenly with water in the chicken only. Now here make sure the chicken is cooked thoroughly so that the frying process will only take a minute.

Step 7


After cooking, I fry it until brownish yellow, now if when cooked it still contains aor, you can just strain the marinade.

Ayam goreng bumbu kalasan is ready to be enjoyed, in my house I usually serve this fried chicken with a combination of soup or soup and then enjoyed with warm rice. Yeah Indonesian food must have rice, fried chicken becomes a very delicious side dish if combined with rice and warm soup. The combination of flavors from these dishes is irreplaceable.

Usually this fried chicken if I make it only lasts for a while because everyone likes it. Including my nephews they spend all the fried chicken, even usually they also enjoy it directly.

That's right, with chili paste it must be very delicious. Yesterday I only enjoyed it with mushroom soup.
