Family Favorite Coconut Stuffed Bread

What is coconut bread?


Coconut bread is stuffed with grated coconut filling that is cooked sweet with granulated sugar, of course, by evoking the aroma of pandan so that it has enough Indonesian flavor.

Yeah have you ever made it at home, or bought bread with sweet and savory coconut filling. Ondonesia is no stranger to this bread, usually my mother or father often buy this bread as a souvenir when returning from work. But after a long time out of work due to old age, this bread is now very rare for me to find. My father rarely buys it, maybe because he rarely travels so this bread is unfamiliar at home.

So I thought that making them happy again by making coconut filled bread will definitely make them happy and smile at home. My mother was already smiling when I stirred the coconut, especially when she enjoyed it. Coconut filled bread has a sweet and savory taste that when combined with soft bread becomes so delicious as breakfast or to accompany coffee in the house.




In making coconut sandwiches, I usually make the coconut filling first. Well for the coconut you have to use half-aged coconut, well this coconut has a softer texture than the usual coconut used for coconut milk.




Coconut Filling Ingredient

100 grams of grated coconut
50 grams of sugar
2 pandan leaves
¼ teaspoon salt



Procedure Making Coconut Filling


Step 1


Prepare the grated coconut, then mix the grated coconut with granulated sugar in a container.

Step 2


I usually squeeze the two together so that they are absorbed. Then add with salt and also don't forget the pandan leaves.

Step 3


Add a little water then turn on the stove and cook the coconut while stirring.

Step 4


Now make sure the coconut dries and there is no more water content. Don't forget to cool it down so make sure when you use it, the coconut is already at room temperature.

I usually make the coconut first so that when making bread, the coconut is already in a condition that can be used immediately. Now if the coconut is finished, it's time to make the bread and apply the coconut as the bread filling later.




Ingredients Dough Bread

200 grams of wheat flour
1 tablespoon milk powder
1 teaspoon instant yeast
1 egg
1 tablespoon margarine
1 tablespoon sugar



Procedure for making Coconut Bread


Step 1


Combine flour and milk powder in a container and mix the two together until evenly distributed.

Step 2


Make yeast in warm water, then mix the dissolved granulated sugar, and add the yeast stirring until evenly let it rise.

Step 3


After the yeast has risen, I mix the egg yolks in the yeast, beat until well mixed.

Step 4


Then add the yeast brew water to the dry dough that has been prepared in the container.

Step 5


Stir and mix until evenly mixed, then add butter and knead the dough.

Step 6


Let the dough stand until it doubles in a closed container.

Step 7


After expanding on the work table then deflate the dough and divide it into several parts according to taste.

Step 8


Round the deflated dough and give a tablespoon of coconut cyan.

Step 9


Then roll out the dough and cut the edges to form a motif, well if you want to make it plain, you can too.

Then do it until finished then rest and cover with a napkin for 45 minutes, then finally oven the bread in for about 25 minutes.

Coconut filled bread is ready to serve, serve it while warm, it is even more delicious to relax and enjoy coffee or ngeteh with family. The softness of the bread with the combination of the sweetness of the coconut filling makes this bread more delicious in addition to being perfectly cooked. I deliberately make this bread more mature than usual, I deliberately make it more brownish so that there is a slightly crunchy texture underneath, I like the texture of the bread.
