Easy Way to Make Mushrooms Kwetiaw Stir-fried with Chili Paste Seasoning
Kwetiaw Sauteed Mushrooms with Spicy Seasoning
This recipe is inspired by the noodle seasoning I usually make at home. But still, kwetiaw has a different flavor from noodles or pasta in general. So there is a separate way to make it more delicious to eat. Of course, without the complementary ingredients that are often found around us.
Well here I added pieces of mushrooms instead of seafood, according to me mushrooms are the only vegan ingredient that we already know tastes very good. In addition, the use of chili paste gives a very delicious taste, I really like the combination of kuetiaw flavors mixed with chili paste. In my opinion, chili paste makes kuetiaw more flavorful and has a very good taste!

Ingredients Needed
1 mustard leaf
50 grams of mushrooms
1 tomato
1 tablespoon chili paste
1 clove of garlic
2 cloves shallot
Cooking Procedure
Prepare all the ingredients then cut the mustard greens remove the hardened stems cut at least three cm in size.
Next cut the mushrooms remove the roots, then cut them also three cm in size like the size of the mustard greens.
Cut the garlic then finely chop the shallots or according to taste.
Cut or chop the tomatoes into squares, then also cut the spring onions measuring two centimeter.
Now that all the ingredients are ready, it's time to boil the water until it boils to boil the kwetiaw.
Boil the kwetiaw until tender, now while waiting for the kwetiaw I started preparing the pan by adding 1 tablespoon of cooking oil.
Saute the onions that have been cut earlier saute until brownish yellow.
Then add the tomato pieces and chili pasta stir until evenly cooked until the chili is cooked.
Add enough water, cook the chili until fully cooked, and make sure it doesn't smell of chili.
Now here the kwetiaw has started to get soft, I remove it then I drain it and sisishkan terlenih first.
Then briefly boil the mushrooms for just 1 minute, remove and drain this so that the mushrooms do not smell bad.
Return to my seasoning pan, continue by adding chopped green onions, and add the mushrooms that have been boiled.
Saute until fragrant and the water shrinks slightly then add the kwetiaw stirring until evenly distributed, Then add the mustard greens.
Stir and season to taste, if you have it you can also season with mushroom broth.
Result

I didn't know kwetiwa before I read your post, I'm gonna search more info but actually your vegan way looks super and healthy
Kwetiaw is a processed form of rice flour, a type of noodle or pasta. Well, this preparation is very delicious for anything, in my country there are 2 types of kwetiaw that are sold, both dry and wet. So what I use is the dry one.

I prefer the texture of kwetiaw bought at the market when it is still 'wet', it seems very different.
You are right that wet kwetiaw is indeed better, but in the market area where I live it is very rarely sold wet. Even dry ones are hard to find here, so usually I have to go to town to find them!.
If it's dry, the texture is more similar to flat noodles or ifumie.
