Crispy Fried Grilled Eggplant with Spicy Sauce

Crispy, savory with a spicy sauce from red chili peppers that is tempting to make those who enjoy it will definitely like it. Simple, vegan-based ingredients that you can easily find in your home.




Crispy Grilled Eggplant


Crispy grilled eggplant is processed eggplant that is grilled then covered in crispy flour and fried dry. Thus creating a delicious dish of crispy eggplant that is very tempting. Dipped with savory spicy sauce that makes anyone who enjoys it will definitely want to make it again in the future.

There are actually a lot of people who make this recipe on this platform, but I see that there are some differences in the process of flouring or even during the serving stage. In Indonesia, eggplant processed like this is synonymous with spicy chili sauce. Enjoyed as a side dish to eat with warm white rice during the day, it can be a substitute for meat for some people. But still in our area there is always tempeh in every dish made crispy fried like this.

So instead of being curious, let's prepare a step-by-step preparation in preparing crispy fried grilled eggplant.




Ingredients

2 purple eggplants
100 grams of wheat flour
100 grams of fanir flour
Water to taste
15 jumbo cayenne pepper
4 cloves shallots
2 cloves of garlic
½ teaspoon salt
1 teaspoon sugar




Cooking Procedure


Step 1


Bake the eggplant on the grill or can be in the oven until the eggplant is cooked turning a brownish yellow color.

Step 2


After the eggplant is cooked, I split the eggplant lengthwise into several parts now at this stage you can add salt to the eggplant, I forgot to take a picture when adding only ¼ teaspoon salt.

Step 3


Then then melt the terogu flour with water until it thickens and stir not to let the flour still have lumps. Then dip the eggplant in the flour.

Step 4


Dip until all parts are exposed to flour then place in fanir flour and let it all spread evenly on the eggplant.

Step 5


Then fry the eggplant in hot oil until brownish yellow and of course crisp.

Step 6


Then prepare the chili, and onions
Then boil the chili ingredients until tender.

Step 7


Blend with a little water, just blend coarsely so that the chili is more delicious. And then Sauté the chili sauce in a spoon of cooking oil,

Step 8


Then season with ¼ teaspoon of salt and 1 teaspoon of sugar, make sure the chili sauce is cooked evenly.

The grilled eggplant that I fried crispy is ready to be enjoyed, I served two versions, one version I cut several parts of the eggplant then I sprinkled it with chili sauce. Another portion I leave the eggplant whole with chili sauce well if you enjoy it just dip it with the chili sauce. Very simple and very easy to prepare at home especially the chili sauce is very fast to serve.

The taste is no doubt very good, eggplant is indeed delicious once processed like this especially combined with the sauce that fits my tongue, namely spicy savory ahh really delicious this time.

What I like the most is the texture of the eggplant is very soft inside and crispy outside of the flour, a very good combination.
