Cooking Up In Mom's Wooden Kitchen With A Delicious Kampung Chicken Recipe

Tradition is something that is embedded in our lives. As if we don't want to forget the traditions that have been passed down from generation to generation. So until now these things have become mandatory for us to celebrate.




Today, Muslims all over the world are entering the month of Ramadan, where everyone is required to fast from morning until nightfall. I never thought that I would be able to meet this month again and be able to carry it out again like in previous years like everyone else out there did.

However, there is something interesting when the fasting month arrives, the day before it enters the month. There is a unique tradition in the area where I was born, specifically in Aceh, this tradition is very well known, namely the Meugang Day tradition. This tradition is a tradition where everyone returns to their mother's house to enjoy delicious food, in the form of various processed meat dishes. Well, the meat usually used is beef, but many people also cook various other meats that they like. The point of this celebration is to gather together to enjoy delicious dishes before fasting the next day.

There was a slight difference in what my mother and I did at home yesterday, we chose to cook free-range chicken to serve as a mainstay menu in the kitchen. This is because my mother and father cannot consume meat, so we took the initiative to make delicious chicken dishes. Even though we still cook beef later for other families who come to visit here.

Interestingly, today I chose to cook in my mother's kitchen, which is a wooden kitchen behind the house. We always use this kitchen for celebrations like this. In our opinion, cooking on a wood stove is much faster and there is also a distinctive aroma when the food is cooked.




I started by preparing quite a lot of ingredients, this is because I was cooking for a lot of people. Check out the recipe below!

Ingredients

2 chickens measuring 4 kg
3 liters of thick coconut milk
2 turmeric leaves
5 lime leaves
2 bay leaves



Softened Seasoning

200 grams of curly red chilies
10 red onion cloves
4 cloves garlic
10 grams galangal
2 stalks lemongrass




Cooking Procedure


Step 1


The first step before preparing some of the seasoning ingredients, I first prepared the chicken first. Because we use chickens that lay eggs with a hard texture. I boiled the chicken first using coconut water. I boil for approximately 1 hour, depending on the level at which the chicken is starting to cook.

Step 2


Once the chicken has started to soften, then I lift it and set it aside. So, I threw away the water used for cooking because I don't like it being too oily.

Step 3


Then I prepared the ground spices, blended the spices until smooth by adding a little water.

Step 4


Thinly chop the turmeric leaves and also the lime leaves. These are the leaves that can add extraordinary aroma and taste to the dish. I love using these leaves in cooking.

Next, if all the ingredients are finish prepared, it's time to start cooking, make sure the pan has been cleaned again. Then pour in the ground spices.

Step 6


Add the prepared coconut milk, add the lime leaves and 2 bay leaves.

Step 7


Then add the boiled chicken and stir everything until evenly mixed.

Step 8


Then cook until the sauce reduces, this takes approximately 1 hour during the cooking process. So the fire I use in this wood stove is a normal fire, not too big or too small. Make sure when cooking, stir the chicken occasionally so that the spices are absorbed and doesn't stick to the pan. During the cooking process, make sure to correct the taste. If the taste is right, like what I cooked, I don't add anything else. However, if it's still bland, you can add more salt and if you like it sweet, add sugar too.

The spiced chicken dish is cooked, I serve it on a plate as a meal together later. Unfortunately my condition is still unstable due to yesterday's illness, my tongue still has no taste, so I don't know the taste of this dish at all. Although I enjoyed it when eating together, it was just bland. But don't worry, I'll tell you a little about the taste, well, this is the taste that my mother and family tasted earlier. They say this is very delicious, the spices are delicious, the spiciness is just right. What's even better is that the chicken is very soft and cooked perfectly, most importantly the spices are perfectly absorbed.
