Cassava Cake With Caramel Sugar Topping

Serving snacks made from grated cassava with caramel is a simple dish but still has its own pleasure.

Cassava is a tuber that is widely found in Indonesia, precisely in lowland areas like where I live. The main source of carbohydrates is not only owned by rice, cassava has high carbohydrates and other nutritional content that is good for your body. In some areas of Indonesia cassava is used as a staple food for their diet, these areas are consumers of cassava as their daily food, they process cassava into cassava rice.

Not only as a staple food, cassava is also processed for various foods in the form of desserts and snacks that are fried or steamed. Besides the low price, cassava is very easy to find. Well, this plant is often a low-class food because it is cheap and very easy to grow in various areas, especially in dry places. But now in this digital era, many chefs share their recipes on the internet using cassava as the main ingredient.

The menu this time I use whole cassava which I then grate and combine with grated coconut. Here I don't add flour because of the sticky texture of cassava so it is very easy to shape. So instead of being curious, I immediately started inviting you to cook.

Ingredients Used

  • 300 grams of Cassava
  • 50 grams of sugar
  • 100 grams of grated coconut
  • 1 tablespoon salt

The Making Procedure

Step 1 The first thing I do to prepare fried cassava, first I start peeling the cassava, and wash it clean.

Step 2 Next, I gently grate the cassava until finish.

Step 3 Then the next step I add salt and grated coconut. Well, for this combination you can also add according to your taste.

Step 4 Then I start to form a circle.

Step 5 I started to fry the dough that has been in the shape of a circle. Fry on low heat until brown.

Step 6 Then lastly, when it's browned, I remove it and drain it so it's not too greasy.

In using grated cassava as a fried dish, I advise you, to remove the excessive water content in cassava, because the nature of aged cassava has a lot of water content. You can do this by filtering or squeezing the cassava water using a cloth.

How to serve caramelized cassava

Step 1 To serve caramelized fried cassava, I prepare caramel from granulated sugar first. First I prepare granulated sugar in a hot pan.

Step 2 Next, I add a little water or according to taste, so that the caramel that I use doesn't burn or not turn brown.

Step 3 Next I cook until the caramel starts to thicken and has a nice texture.

Step 4 Finally, I mix the cassava that has been fried earlier. Well here I advise you at this stage not to turn off the stove fire, because if the fire is turned off then the caramel will harden quickly.

You will feel the taste sensation of crispy fried grated cassava on the first bite, then on the inside of the cassava you will feel the soft and chewy taste of the cassava texture. The savory taste on the inside of this snack is very delicious and there is no sweet taste on the inside, but you will find a sweet and crunchy taste on the outside in the caramel that I smear earlier. This snack is so extraordinary that it only has cassava as the main ingredient and is very simple, cheap and easy to process.
