>_ Hola amigos, después de varios días de ausencia, por fín les traigo el último post del Festival del Pulque de Ocampo 2022.

La idea original era poder hacer los tres post lo más seguido posible, pero he estado bastante ocupado en el mundo real, así que aquí está el último post, en el que nos vamos enfocar en el pulque, la estrella del show.

Para ponerlos en contexto, el pulque es una bebida alcohólica fermentada del aguamiel de agave o maguey pulquero. Puede llegar a tener del 5% al 12% de alcohol y en los últimos años se ha empezado a preparar con cereales, frutas, verduras, chiles, etc.

Es una bebida de origen prehispánico, no se sabe exactamente el origen del pulque, pero los estudios más actuales sugieren que se originó en el estado de Hidalgo al rededor del año 700 a.C. en el Valle de Apan.

>_ Hello friends, after several days of absence, I finally bring you the last post of the Festival del Pulque de Ocampo 2022.

The original idea was to be able to do all three posts as often as possible, but I've been quite busy in the real world, so here is the last post, in which we are going to focus on pulque, the star of the show.

To put you in context, pulque is a fermented alcoholic beverage made from agave mead or maguey pulquero. It can have from 5% to 12% alcohol and in recent years it has begun to be prepared with cereals, fruits, vegetables, chili peppers, etc.

It is a drink of pre-Hispanic origin, the exact origin of pulque is not known, but the most modern studies suggest that it originated in the state of Hidalgo around the year 700 BC. in the Valley of Apan.

>_ Históricamente el pulque ha estado fuertemente atado a la religión en sus orígenes; durante el periodo de conquista y colonial de México, se volvió una fuente de poder económico y político; por muchas decadas fué la bebida alcohólica por excelencia, para después ser desplazada por la cebada y la cerveza e fuertes intereses económicos; en los últimos 100 al pulque se le ha marginado lleno de fuertes estigmas sociales, llegando a casi desaparecer y llegar a consumirse únicamente en algunos pueblos del país.

Es a partir de los últimos 20 años, donde el pulque ha empezado a recobrar un nuevo auge y se ha vuelto a poner como la bebida natural artesanal local por excelencia.

Gracias a su precio muy económico y el esfuerzo de cientos de productores y de ferias y festivales a nivel nacional, el pulque empieza a permear y librarse de los estigmas sociales negativos.

En el pasado se pensaba que únicamente la gente más humilde y pobre del país tomaba pulque, pero es cada vez más común ver a gente de todos los estratos sociales, jóvenes o adultos, hombres o mujeres tomar pulque.

Inclusive, en algunas zonas y por ser un producto 100% natural, se le ha añadido el grado de "artesanal", con lo que ha podido colocarse como una bebida "premium" para el novel o desconocedor de este mundo.

In the past it was thought that only the humblest and poorest people in the country drank pulque, but it is increasingly common to see people from all social strata, young or old, men or women drinking pulque.

In some areas, and because it is a 100% natural product, the degree of "artisan" has been added, with which it has been able to position itself as a "premium" drink for the new or unfamiliar with this world.

>_ A mí lo que me gusta más es la pasión de los productores, no importa si son chicos o grandes, siempre están abiertos a platicar con la gente y se nota la pasión que le tienen a esta bebida. También se ha desarrollado una cultura muy interesante de parte de los más jóvenes de conciencia social y de agente democratizador que creo que en estos tiempos está ayudando a muchas causas y peleas sociales.

Pues eso es todo por el momento amigos. Espero que las fotos de esta serie de tres post les hayan gustado. Me gustaría poderles compartir y hablar un poco más de esta bebida y de como se produce, pero tengo que primero buscar quién me puede dar permiso de acompañarlo al proceso de raspado, que en verdad es una experiencia bien interesante.
