Welcome to my blog again. I am so glad that you are here. Today i would like to share the recipe of dal vada ( lentils fritters) which is a special snack of Indian cousine . My grandmother makes the perfect and amazing dal vada which recipe i am going to share with you all. This is a protein -rich recipe if you want to make it more healthy air-fried it instead of deep fried.
Dal vada is a deep fried snack made by lentils and species . After eating these crispy, crunchy, delicious dal vada Both heart and mind become happy. Especially When you enjoy dal vada made by your grandmother or mother. We like the vada of grandmother's hand so much that we end up overeating every time.
This is a perfect for tea-time snack, but you can also enjoyed it at breakfast or dinner. You can enjoy it with garlic or any other chutney. Or you can enjoy this vada any time 😜. Making Dal Vada requires a little trick, patience and time.
Let's enjoy my grandmother's Rajasthan special dal vada recipe :
INGREDIENTS ✅
- Moth beans 4-5 cups
- Garlic 1/4 inch
- Green chill 4-5
- Coriander leaves
- Dried Fenugreek leaves
- Salt
- Red chilli powder 3 tbsp
- Whole coriander 1 tbsp
- Hing
- Green fennel seeds 1 tbsp
PROCESS ✅
Step 1 : Soaking the moth beans
First we have to soak the moth beans for 6-8 hours. That day we made lots of vada so we soak in a clean bucket 😜. Use large container to soak beans properly.
After it remove the water and wash it. You have to wash it carefully so that all the peels are removed. Use the big strainer.
My grandmother always does this process. After that remove all the excess water and And keep the lentils on a cloth for some time to drain the water.
After wash well moth beans lentil look like that.
Step 2 : preparation
On the other hand Cut ginger, green chilli and coriander leaves finely . You can grate the ginger.
Step 3 : Grinding
This is also a main step. You have to grind it perfectly to make the perfect vada. Don't use water while grinding. And make the paste like that.
This process also take some time. After it mix the spices in it.
For making vada your mixture is ready.
Step 4 : deep-frying
Take a deep pan or kadai and heat the oil to fry the vada.
To make Vada, the oil should be hot at right temperature...but it should not be too hot. After it put vada into the oil.
Now making vada is an art. Which I am also still learning.

For this you will have to place a cotton cloth on a bowl. And put the batter on a cloth and give it a shape. like this :
My grand mother is so perfect to making the vadas.
Put 5-8 vada at one time and fried them properly from both side.
Place on the kitchen paper or a plate and enjoy hot with your loved ones.
This time we enjoyed it with gralic and dried red chilli chutney.

Yes ! We can replace it with green lentils...but with red lentils i never tried 😀
