Wax gourd, also known as winter melon or ash gourd (scientific name: Benincasa hispida), is a large, vine-grown fruit native to Asia. Despite its name, it's technically a type of gourd and is commonly used as a vegetable in cooking. Its outer skin has a waxy coating that helps it store well, giving it the name "wax gourd." It is usually round or oblong, with a hard, green rind that turns waxy as it matures. The flesh inside is white, spongy, and mild-tasting. The flavor is subtle, slightly sweet, and absorbs seasonings well.
