Vegan Recipe- Indian Dal Fry (Split Pigeon Peas)

In India, "rice, millet, wheat, legumes, cereals, etc constitute staple food. Today I will share the recipe of "Dal Fry", which is prepared with toor dal/Arhar Dal, also known as yellow dal.
Toor dal is a perennial legume that belongs to the Fabaceae family, which is also known as pigeon pea or split pigeon pea, arhar dal or red gram dal.
It generally undergoes a two-fold process:-
- Soft cooking with a pressure cooker to break it down into mushy consistency.
- Tempering it with tadka, and spices.
Please bear in mind that in India for the same recipe/food item, there are n number variants, so while the broader concept of Dal Fry remains intact, it will have minor additions/improvisation from one place to another, it can also vary from family to family.
Today I will share the kind of Dal Fry that I generally prepare at home and my parents usually like it. Although I am not a good cook, I am good at making "Dal Fry"(split Indian pigeon peas).
It's purely a vegan recipe--(Vegan Dal Fry), and no Ghee/Cream/Butter is used in this recipe.
Ingredients
- 1 cup of Toor Dal/Arhar Dal
- 1 Tomato
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon chilli powder
- 1 teaspoon garam masala
- 1 teaspoon cumin seeds
- 10-15 garlic cloves
- 2 green/red chillies
- 1/2 inch Zinger
- 2 Onions
- Fenugreek Leaves
- 2 tablespoon mustard oil
Now let's start..........
First off, we will take 1 cup of toor dal(Indian split pigeon peas) and wash it properly in water so that extra starch is removed.
Then add 4 cups of water, turmeric powder, and salt, and put the lid on the Pressure cooker. At least 10 whistles are needed to break it down into mushy consistency.
Now coming to the second part, we will have to chop Onion, Garlic, Zinger, and tomato for tempering and "tadka". Let's do it.

Now we will take a pan and lit up the gas stove. Add 2 tablespoons oil(I have taken refined oil), it's better to use mustard oil.
First, add cumin seeds into the hot oil and fry till they start spluttering, then add chopped zinger/garlic into the hot oil, fry it.
Then add chopped Onion into it and keep frying it until it becomes silky. Finally, add sliced tomato.
Then pour the soft cooked Dal(Indian pigeon split peas) into it & mix it well, and leave it for cooking for another 5-10 minutes. In this step, add fenugreek leaves, which induce a nice aroma and flavor to "Dal Fry". Check the consistency and adjust it according to your choice.
