Healthy vegan food, cooking Thai style : πΆοΈπ₯¬π₯π π₯ Steamed sticky rice and Champignon mushrooms spicy salad (Laap).
Hello everyone, today we are in the kitchen because we haven't cooked Thai Isaan food in a long time. It's been a while since we've cooked anything. Today, we'll take everyone to cook a vegan manu, which is sticky rice and Spicy Salad or "Larb" with champignon mushrooms, which are highly nutritious. The properties of champignon mushrooms are low in calories and are antioxidants, making them suitable for health-conscious people. They also help nourish the nervous system and muscles.
When I bought the mushrooms, I didn't know what to cook besides Italian food, so I thought of Thai food. Normally, this dish is suitable for meat, but it can be modified for health or for those who don't want to eat meat. This is the first time I've tried using champignon mushrooms to make larb. Let's take a look at the ingredients.
Ingredients for making Laab with Champignon Mushrooms
- Champignon mushrooms 300 grams
- Shallots 1
- Tomatoes 5-6 pieces
- Coriander 3 stalks
- Chili powder 1 teaspoon
- Seasoning powder 1 teaspoon
- Roasted rice 1 teaspoon
- Lime 1/2 piece
- Oil 1 tablespoon
How to steam sticky rice
Wash the sticky rice in two or three times, then soak it in water for 4-5 hours (If you want the sticky rice to be soft and cook faster, soak it overnight).
Then wash the soaked sticky rice and put it in a steamer (for cooking sticky rice).
Put water in a pot over medium heat. The pot used must be quite deep because it will need heat from the steam. Do not put too much water in it so that the rice gets wet. Place the steamer with the sticky rice on the pot and close the lid.
Wait for about 15-20 minutes to see if the sticky rice is cooked. Then turn to the other side, cook for about 8-10 minutes.
Then use a wooden spatula to open and check if everything is cooked, turn off the heat, done.
Steps for making Spicy Salad (Laab) with Champignon Mushrooms
- Wash the Champignon mushrooms, then slice them thinly according to their shape.
- Put oil in a pan and prepare to fry the mushrooms in oil, do not add until dry. Set aside to cool and season with seasoning powder, add lime.
- Then add chili powder, add roasted rice to increase the aroma (the amount of seasoning depends on your preference). Those who like spicy can increase the amount themselves.
- Add sliced ββshallots, sliced ββtomatoes and coriander, sprinkle with water, mix well and serve.
Everything is ready, eat with fresh vegetables, it's even more delicious. And this is Isaan Thai food with the original cooking method. Some things may be modified according to your preference.
