Creamy Curried Chicken 🍛 with Authentic Khmer Noodles - Cooking Process as My Country Style
Greetings everybody, Khmer creamy red curry is kind of special recipe that made of coconut-milk-based, the main ingredients could be chicken or any kind of meat, vegetables like eggplant, green beans, potatoes, fresh coconut milk, lemon grass and kroeung. To fulfill the food, Cambodians often serve Khmer red curry with bread.
Bread is soft and sweet while curry is salty and spicy, which is such a perfect combination. But, another way is we can try it with noodles. Today I am going to show you how to make this curry eating with Khmer Noodles. This delicious food is traditionally served at special occasions in Cambodia such as weddings, family gathering and religious holiday such as Pchum Ben or Ancestor’s Day.
INGREDIENTS
2 chicken: cut into chunky pieces with bones
3 teaspoon of vegetable oil
Anise, nut
2 teaspoon of red kreoung paste (curry paste)
1 teaspoon of shrimp paste
3 teaspoon of fish sauce
2 teaspoon of palm sugar
1 teaspoon of salt
1 cup of coconut milk/cream
3 cups of water
2 brown onions cut into quarters
4 Green beans cut into 2 inch pieces
1 small aubergine cut lengthwise into 2 inch pieces
2 sweet potato
Eggplants
Shrimp paste
Instructions: Step 1
Cook red garlic on the skillet, turns the heat and stir it without oil until it turns brown about 1 minuets. Set it aside.
Step 2
Next, make the nut into small pieces. You can use a blender to make it smaller than I do. I used Khmer tool it calls Tbal, because I don’t get a blender at home.
Step 3
Smash or hit both red and white garlic after fry it. This process is said to make our recipe fragrant and more savory.
Step 4
Smash an anise all together and set it with the garlic. It is a pungent spice that can completely outshine all other flavors in a dish.
Step 5
Heating Coconut Milk
You can also use fresh coconut milk or coconut milk products. Like heavy cream, it will stand up to cooking and boiling, becoming more concentrated as water evaporates from it. Coconut milk doesn't "break," or curdle, when it 's heated. Just when it cooked it about 2-3 minutes, add the curry red sauce into the pot.
Step 6
Stirring the red sauce and coconut milk together in the pot, then carefully transfer all the garlic and nuts into the pot.
Now, pour about 1 tablespoon of spicy red powder into the pot, stirring all the ingredients together over medium heat. When it turns dark red, add Kroeung and stir it together.
Step 7
I used about 1 tablespoon of shrimp paste. Add to the pot.
To make the chicken tender, For the most tender chicken, we simmer it gently. We add just enough water to cover the chicken then bring everything to a low simmer and wait about 30 minutes until the chicken is very tender. Once the chicken is cooked, add vegetables.
Add the amount of water to cover the chicken, also pour some sugar and salt to the pot too.
Step 8
After 30 minutes, the chicken is obviously cooked, add fish sauce. Here I use about 1 tablespoon.
Step 9
Then add the onion, potatoes and green beans, simmer for another 2 minutes.
Step 10
Season with salt to taste, and bring back to boil and simmer gently for a few more minutes. You can Serve with freshly steamed jasmine rice. Drizzle with a little chilli oil (if using) and scatter some chopped peanuts on the side.
