Bitter Melon Scrambled Eggs Breakfast Fry 🍳 👩🍳 - Healthy and Delicious Cambodian Recipe
Greetings everyone, I’m @mich.brmey and welcome to today’s delighted plate! It is a bitter melon stir-fry dish that have been cooked in my family since I was young. Bitter melon is extremely nutritious. Well, I am not really a big fan of this vegetables but I just find it easy to eat than before because aside from eating it raw, it can be made into several fry with another savory taste.
🧂 Ingredients
- Bitter melon
- Eggs
- Green onion
- Black peppers, salt, sugar, fish sauce and oyster sauce
🧭 Instructions
Firstly, we need to cut the ends off the bitter melon and cut in half lengthwise like I show you on the top. Then we can use a small spoon or any tool to scoop out all the white soft part with seeds inside of bitter melon. Do not peel it because their skin is edible.
Place the halves face down: To slice this melon we need to flip the halves of the melon over and use knife to cut the melon into slices width-wise. Each slices should be approximately 1 or 2 inches.
Tone down the bitterness in a bitter melon: Well, I usually soak them in salted water in order to make it less bitter but today I feel that I want to serve it with the bitter original taste so I skip this step. However, you can do any other way as you prefer to make it less bitter like soak them with salt or boiling. It is okey.
Now that we have individual cloves, grab as many as you need for frying. Use a knife to trim the root end.
Place the flat side of a knife over a clove, with the blade facing away from you. This time we use gentle pressure to lightly crush the clove between the wooden cutting board. Continue do it again for another clove. After we finished all we can peel the skin easily. Next, we just chop it as fast or slow as you prefer as usual.
I love to make my favorite fried egg: the crispy vegetables oil fried egg. These fried eggs have golden, crispy edges, which contrast beautifully with their runny yellow yolks.
We heat a small cast-iron or nonstick skillet over medium-high heat. When it really hot, add the oil swirl it around the skillet. Immediately crack the egg into the skillet.
Then add some water to the skillet, reduce the heat to medium low, cover, and cook for 1 minute and Remove the egg from the pan immediately. Lastly, seasoned with salt and pepper if you’d like.
I place one eggs aside. I need it for decorating the plate so I fry another 3 eggs and scrambled it in the skillet with adding the garlic. Stir it again and again make sure that our garlic turns brown.
This time we can decrease the heat. Pour all the bitter melon into the skillet. Continue stir bitter melon with scrambled eggs as fast as usual.
Continue stir it together about 4 minutes we can seasoning it with sugar and fish sauce. Here, I use about 1/4 tablespoon of sugar and 2 tablespoon of fish sauce.
Well, bitter melon is a bit hard to cook I stir it again and again and finally taste it and it still crispy. To save the time you can add some water, cover it with the lid about 5 minutes. After 5 minutes, we pour black peppers all over the skillet about 1/3 tablespoon. Still continue stirring it.
Another ingredients is oyster sauce. I add about 1 tablespoon to make it more flavorful also I add about 1/2 cup of water into this skillet to simmer it again.
Finally, I taste the bitter melon again and it cooked so I add all the green onion into the skillet, stirring with all the ingredients together 1 more minutes. Then it is done.

I remember a bitter melon from my trip to Okinawa. It is a very healthy vegetable, unfortunately not available in my country. It's nice that you can buy it and make such a tasty, healthy meal with it 😋
