Una torta de anversario [Esp/Eng]
Greetings to the #plantpower community on its third anniversary. Thank you for existing, this community has led me to understand the meaning of using ingredients to prepare recipes that promote health even if we are not or do not consider ourselves 100% vegan.
In the beginning of this community I was invited to post here, my thought: I don't know anything about vegan food.
As it turns out, I realized that I do cook vegan on certain occasions, not using any animal ingredients, in this case I began to observe more my culinary moments when I didn't want to eat meat. The result was nutritious lunches with only grains, vegetables. So, sautéed bananas, stewed vegetables, grains, vegetable creams, chopped fruits for dessert...I went step by step creating awareness and I can say that there is something vegan in me, of course never 100%...but my body asks for vegan from time to time.
To celebrate the 3rd anniversary of this community, the cake or cake to recreate the moment of the anniversary could not be missing.
I confess that this is the first time I make a vegan dessert, I share the ingredients, the process and the result.
Para esta torta se utilizò:
3 tazas de harina de avena (avena en hojuelas procesada en casa)
1 taza de zanahoria rallada
1 taza de jugo de naranja
2 cucharadas (sopera) de ralladura de naranja
1 cucharadita (postre) de esencia de vainilla
1 taza de pasas o ciruelas pasas (para esta se utilizò pasas y uvas pasas)
1 taza de nueces picadas
1/4 de taza de aceite de oliva
1 pizca de sal
1 cucharadita de canela(postre)
2 cucharaditas(postre) de bicarbonato de sodio
Nota: me siento màs còmoda con las medidas de tazas y cucharadas.
3 cups of oat flour (flaked oats processed at home).
1 cup grated carrots
1 cup orange juice
2 tablespoons (tablespoons) orange zest
1 teaspoon (dessert) vanilla essence
1 cup raisins or prunes (raisins and raisins were used for this one)
1 cup chopped walnuts
1/4 cup olive oil
1 pinch of salt
1 teaspoon cinnamon (dessert)
2 teaspoons(dessert) of baking soda
Note: I feel more comfortable with cup and tablespoon measurements.
A preparar los ingredientes
To prepare the ingredients
Soak the raisins in hot water for 15 minutes. In the meantime, grate the carrot, squeeze out the orange juice, pass the oat flakes through the blender to turn them into flour.
Once the ingredients are measured, place the carrot, the orange juice, the vanilla, the olive oil and the lemon zest in the blender (this gives an exquisite smell to the preparation). Process these ingredients.
Now the dry ingredients, in the oat flour incorporate the salt, cinnamon, baking soda (this can be placed at the end), chopped walnuts, stir everything until integrated. Once the dry ingredients are incorporated, add the liquid. If necessary, add 1/2 cup more orange juice. Finally, add the raisins and raisins, chopped (the function of these is to give a sweet and natural touch to the cake).
Once the mixture is ready with all the ingredients incorporated and well united, the cake pan is prepared with oil and oatmeal.
Incorporated in the chosen container, ready to take to the oven. Oven previously heated. My oven only marks numbers 1 to 5...I usually put it on number 4 for baking.
The baking time is 35 minutes. I make the caveat that everyone knows their own oven. It can be less or more time in the oven.
The cake is ready out of the oven, waiting for it to cool down to test the result.
Tips: eat it the day after its preparation, the reason to feel the sweetness of the raisins and concentrate the flavor of the walnuts.
Those with whom I shared this result were pleased with it and made suggestions for a next vegan cake. It means that I obtained a good result, in terms of presentation, thickness and taste.

Este es un pastel muy nutritivo y delicioso. Está genial que hayas omitido el azúcar, ya que de este modo es mucho más saludable. El uso de los diversos ingredientes combinan muy bien, y es muy sabio esperar hasta el día siguiente para degustarlo, ya que así los sabores se asientan y se armonizan.
